🍽️ Vegan Paella with Peppers, Peas, and Meat Alternatives

Ingredients
- peppers, red 2 pcs.
- peppers, yellow 1 pcs.
- onions, yellow 1 pcs.
- garlic cloves 1 pcs.
- oil 4 tbsp.
- vegan chunks, chicken style 555 g
- salt pinch
- pepper, black ground pinch
- curry powder 2 tsp.
- risotto rice 300 g
- peas, frozen 300 g
- vegetable broth 1 L
- spring onions 1 bunch
- lemons 1 pcs.
Instructions
- 1. Wash the peppers thoroughly.
- 2. Cut the peppers in half.
- 3. Remove the tough stem and seeds from the peppers.
- 4. Dice the deseeded peppers into small cubes.
- 5. Peel the onion.
- 6. Peel the garlic clove.
- 7. Finely chop the onion.
- 8. Finely chop the garlic.
- 9. Heat two tablespoons of oil in a large pan over high heat.
- 10. Fry the vegan chicken chunks for about six minutes until golden brown.
- 11. Remove the fried chunks from the pan.
- 12. Place the chunks on a plate to the side.
- 13. Do not clean the pan.
- 14. Add one tablespoon of oil to the same pan.
- 15. Heat the oil over medium heat.
- 16. Add the diced peppers to the pan.
- 17. Add the chopped onion to the pan.
- 18. Add the chopped garlic to the pan.
- 19. Sauté the vegetables for about two minutes.
- 20. Season the mixture with salt.
- 21. Season the mixture with pepper.
- 22. Season the mixture with curry powder.
- 23. Add the rice to the pan.
- 24. Add the peas to the pan.
- 25. Pour in vegetable broth until the ingredients are covered.
- 26. Cover the pan with a lid.
- 27. Reduce the heat to a low setting.
- 28. Let the paella simmer for about twenty to twenty-five minutes.
- 29. Check the cooking progress after about ten minutes.
- 30. Fold the vegan chunks into the rice and vegetable mixture.
- 31. Wash the spring onions.
- 32. Shake the spring onions dry.
- 33. Slice the spring onions into thin rings.
- 34. Wash the lemon.
- 35. Cut the lemon into quarters.
- 36. Add the spring onion rings to the finished paella.
- 37. Season the paella to taste.
- 38. Serve the paella on plates.
- 39. Garnish each plate with a piece of lemon.
