🍰 Easter Bunny Pancakes

Ingredients
- Eggs 3 pcs.
- sugar 40 g
- vanilla extract 1 tsp
- Mascarpone 250 g
- Buttermilk 100 ml
- Wheat flour, Type 405 150 g
- Baking powder 1.5 tsp
- Nougat cream 30 g
- Bananas 1 pcs.
- Whipping cream 200 g
- San-apart 2 tsp
- Chocolate chunks, milk chocolate 30 g
- Blueberries, fresh 100 g
Instructions
- 1. Beat the eggs with a pinch of salt, the sugar, and one teaspoon of vanilla extract until white and creamy (5-10 minutes).
- 2. Stir the mascarpone until creamy and slowly add the buttermilk.
- 3. Mix the egg and milk mixture until smooth without lumps.
- 4. Mix the flour with the baking powder.
- 5. Sift the flour mixture in and gently fold it in.
- 6. Heat a large frying pan.
- 7. Grease the pan with baking spray, butter, or oil.
- 8. Put the batter into the large scoop for the bunny's body.
- 9. Put the batter into the medium scoop for the head.
- 10. Put the batter into the small scoop for the feet and ears.
- 11. Bake the round parts (body, head, feet) over medium heat for about 3-4 minutes.
- 12. Flip the pancakes when the surface is firm.
- 13. Bake the second side for about one more minute.
- 14. Remove the pancakes from the pan.
- 15. Spread the batter into an elongated shape for the ears.
- 16. Bake the ears using the same method as the other parts.
- 17. Glue the ears together using nut nougat cream.
- 18. Glue the head onto the ears using nut nougat cream.
- 19. Glue the body to the head using nut nougat cream.
- 20. Glue the feet to the body using nut nougat cream.
- 21. Slice the banana into rounds.
- 22. Brush the banana slices with lemon juice to prevent browning.
- 23. Whip the cream with San-apart and half a teaspoon of vanilla extract until stiff.
- 24. Fill the cream into a piping bag with a star tip.
- 25. Place a banana slice on the feet.
- 26. Place a banana slice on the body.
- 27. Decorate the feet with chocolate drops.
- 28. Pipe the cream as a tail onto the banana slice.
- 29. Place another banana slice on the plate.
- 30. Arrange the blueberries as a flower around the banana slice.
