🍰 Sweet Easter Bunny Yeast Pastries

Ingredients
- yeast, fresh 42 g
- water 20 ml
- sugar 80 g
- wheat flour, type 405 500 g
- salt 1 tsp
- eggs 2 pcs
- milk 220 ml
- butter 80 g
- coconut flakes 10 g
Instructions
- 1. Mix the yeast, water, and sugar in a large bowl.
- 2. Add the flour, salt, one egg, the milk, and the butter.
- 3. Knead the dough for about 10 minutes until it is smooth and elastic.
- 4. Shape the dough into a ball, lightly grease it, and let it rise covered for about 1 hour.
- 5. Divide the risen dough into 16 equal portions.
- 6. Shape each portion into a small ball.
- 7. Take a small piece from one ball and shape it into a tiny ball for the tail.
- 8. Roll the rest of the ball into a rope about 30 cm long.
- 9. Cross the rope over itself twice to create the bunny shape.
- 10. Place the bunnies and tails with some space between them on baking sheets lined with parchment paper.
- 11. Beat one egg and brush the bunnies and tails with it.
- 12. Roll the small tails in coconut flakes.
- 13. Place the trays in a cold oven to let the bunnies rise one more time.
- 14. Bake the Easter bunnies at 170 degrees Celsius (conventional heat) for 20 minutes.
