🍰 Easter Lemon Cookies

Ingredients
- Lemon 1 pc.
- butter 125 g
- Sugar 100 g
- Salt pinch
- Eggs 2 pc.
- Wheat flour, Type 405 330 g
- Baking powder 1 tsp
- Icing sugar 80 g
Instructions
- 1. Rinse a lemon under hot water.
- 2. Finely grate the lemon zest.
- 3. Squeeze the lemon juice.
- 4. Beat butter, sugar, salt, and eggs in a bowl until creamy.
- 5. Add the lemon juice and zest to the butter mixture.
- 6. Mix the ingredients well together.
- 7. Mix flour and baking powder in a separate bowl.
- 8. Knead the flour mixture into the butter mixture.
- 9. Store the dough in the refrigerator for about one hour.
- 10. Preheat the oven to 175 degrees Celsius with top and bottom heat.
- 11. Lightly dust a work surface with flour.
- 12. Roll out the dough in portions to a thickness of approx. 5 mm.
- 13. Cut out Easter shapes from the dough.
- 14. Poke holes for hanging into the cookies or insert wooden skewers from the bottom.
- 15. Place the cookies on a baking sheet lined with baking paper.
- 16. Bake the cookies in the oven for approx. 12 to 15 minutes.
- 17. Take the cookies out of the oven when the edges are golden yellow.
- 18. Let the cookies cool down.
- 19. Sift powdered sugar into a bowl.
- 20. Stir the powdered sugar smooth with a little water.
- 21. Fill the glaze into a freezer bag.
- 22. Cut off a small corner of the freezer bag.
- 23. Decorate the cooled cookies with the glaze.
