🍰 Easter Lemon Cookies

Ingredients
- lemons 1 pc.
- butter 125 g
- sugar 125 g
- salt pinch
- eggs 2 pc.
- wheat flour, Type 405 330 g
- baking powder 1 tsp
- powdered sugar 100 g
Instructions
- 1. Rinse the lemon thoroughly.
- 2. Finely grate 1 teaspoon of the zest.
- 3. Squeeze out the juice of the lemon.
- 4. Mix the butter, sugar, salt, and eggs well together in a bowl.
- 5. Add the lemon juice and zest and stir everything in.
- 6. Mix the flour and baking powder.
- 7. Knead the flour mixture into the dough.
- 8. Place the dough in the refrigerator for about 1 hour.
- 9. Preheat the oven to 175 °C with top and bottom heat.
- 10. Roll out the dough in portions on a floured surface to a thickness of approx. 5 mm.
- 11. Cut out Easter figures from the dough using cookie cutters.
- 12. Poke holes for hanging in the cookies or insert wooden skewers from the bottom.
- 13. Place the cookies on trays lined with baking paper.
- 14. Bake the cookies for about 12–15 minutes until the edges are golden yellow.
- 15. Let the cookies cool down.
- 16. Sift the powdered sugar.
- 17. Stir the powdered sugar smooth with a little water.
- 18. Fill the glaze into a piping bag.
- 19. Cut off a small corner of the piping bag.
- 20. Decorate the cooled cookies with the glaze.
