🍰 Springtime Easter Cupcakes with Lime Buttercream

Ingredients
- butter 250 g
- sugar 125 g
- vanilla extract 1 tsp
- eggs 2 pcs
- organic limes 2 pcs
- wheat flour, type 405 250 g
- baking powder 2 tsp
- salt pinch
- powdered sugar 200 g
- food coloring, green 2 tsp
- macarons 6 pcs
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Take a large bowl.
- 3. Add 150 grams of soft butter, sugar, and vanilla extract to the bowl.
- 4. Beat the ingredients until creamy and smooth.
- 5. Add the eggs one by one and mix well after each addition.
- 6. Wash the limes under hot water and dry them.
- 7. Finely grate the lime zest.
- 8. Squeeze the limes to get the juice.
- 9. Add the lime zest and juice to the bowl with the batter.
- 10. Sift flour, baking powder, and a pinch of salt into the bowl.
- 11. Mix everything quickly into a smooth batter.
- 12. Grease the cups of a muffin tin or line them with baking cups.
- 13. Distribute the batter evenly among the prepared cups.
- 14. Bake the cupcakes in the preheated oven for about 20 to 25 minutes until golden brown.
- 15. Remove the muffins from the oven.
- 16. Carefully release the cupcakes from the tin.
- 17. Let the cupcakes cool completely on a wire rack.
- 18. Take a clean bowl for the buttercream.
- 19. Add 100 grams of soft butter and powdered sugar to the bowl.
- 20. Beat the buttercream until smooth.
- 21. Add food coloring and mix it in evenly.
- 22. Fill the buttercream into a piping bag.
- 23. Attach a grass tip (a nozzle with multiple small openings for a grass-like look) to the piping bag.
- 24. Pipe the buttercream onto the cooled cupcakes.
- 25. Decorate the cupcakes as desired with Easter eggs, macarons, or sprinkles.
