  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Grease four small dessert molds (each approx. 150 milliliters) with some butter.
  3. 3. Put 100 grams of sugar into a pot and heat it on medium heat.
  4. 4. Let the sugar caramelize for about two minutes until it turns golden brown.
  5. 5. Carefully deglaze the caramel with five tablespoons of warm water.
  6. 6. Stir until the caramel has completely dissolved in the water.
  7. 7. Pour the caramel liquid evenly into the prepared molds.
  8. 8. Separate one egg and use only the yolk for the recipe.
  9. 9. Mix the yolk, two whole eggs, milk, condensed milk, and 50 grams of sugar well together in a bowl.
  10. 10. Distribute the flan mixture evenly over the caramel in the molds.
  11. 11. Cover the molds tightly with aluminum foil.
  12. 12. Fill a large baking dish with hot water until it is about one centimeter high.
  13. 13. Carefully place the dessert molds into the water bath in the baking dish.
  14. 14. Bake the flans in the oven for about 40 minutes until they are set.
  15. 15. Carefully turn out the finished flans from the molds onto plates.
