  1. 1. Rinse the bulgur in a fine sieve under cold water.
  2. 2. Place the bulgur in a pot with water and half a teaspoon of salt.
  3. 3. Bring the mixture to a boil.
  4. 4. Reduce the heat and let the bulgur soak for about 10 minutes.
  5. 5. Peel the onion and dice it.
  6. 6. Heat two tablespoons of olive oil in a small pan.
  7. 7. Sauté the onions for three to four minutes.
  8. 8. Add the tomato paste and cook for another minute.
  9. 9. Finely chop the spring onions, parsley, and mint.
  10. 10. Transfer the cooked bulgur to a large bowl.
  11. 11. Mix the bulgur well with the other ingredients.
  12. 12. Cut the eggplants into five millimeter thick slices.
  13. 13. Lightly salt the eggplant slices.
  14. 14. Let the eggplants sit for about 15 minutes to draw out bitter substances.
  15. 15. Rinse the eggplants thoroughly afterward.
  16. 16. Squeeze out the excess water from the eggplants.
  17. 17. Slice the bell peppers into strips.
  18. 18. Slice the zucchini into rounds.
  19. 19. Heat four tablespoons of oil in a pan.
  20. 20. Sauté the vegetables one at a time for about two minutes on each side.
  21. 21. Cut the lemon in half.
  22. 22. Squeeze out the juice of the lemon.
  23. 23. Press the garlic.
  24. 24. Mix the garlic with the yogurt.
  25. 25. Add half a teaspoon of salt and pepper to the yogurt mixture.
  26. 26. Adjust the sauce with one tablespoon of lemon juice to taste.
  27. 27. Place a wrap on a work surface.
  28. 28. Spread the bulgur salad on the wrap.
  29. 29. Place the grilled vegetables on top.
  30. 30. Add the yogurt sauce.
  31. 31. Optionally add fresh parsley and mint.
  32. 32. Fold the wrap.
  33. 33. Serve the wrap immediately.
