🍽️ Oriental Wraps with Bulgur Salad and Grilled Vegetables

Ingredients
- Bulgur 300 g
- Water 700 ml
- Salt 1 tsp
- Red onions 1 pc
- Tomato paste 1 tbsp
- Olive oil 6 tbsp
- Spring onions 2 pcs
- Parsley, fresh 1 bunch
- Mint, fresh 1 bunch
- Eggplants 2 pcs
- Pointed peppers 3 pcs
- Zucchini 2 pcs
- Garlic cloves 1 pc
- Yogurt, plain 500 g
- Pepper, black ground 0.5 tsp
- Lemons 1 pc
- Wraps 8 pcs
Instructions
- 1. Rinse the bulgur in a fine sieve under cold water.
- 2. Place the bulgur in a pot with water and half a teaspoon of salt.
- 3. Bring the mixture to a boil.
- 4. Reduce the heat and let the bulgur soak for about 10 minutes.
- 5. Peel the onion and dice it.
- 6. Heat two tablespoons of olive oil in a small pan.
- 7. Sauté the onions for three to four minutes.
- 8. Add the tomato paste and cook for another minute.
- 9. Finely chop the spring onions, parsley, and mint.
- 10. Transfer the cooked bulgur to a large bowl.
- 11. Mix the bulgur well with the other ingredients.
- 12. Cut the eggplants into five millimeter thick slices.
- 13. Lightly salt the eggplant slices.
- 14. Let the eggplants sit for about 15 minutes to draw out bitter substances.
- 15. Rinse the eggplants thoroughly afterward.
- 16. Squeeze out the excess water from the eggplants.
- 17. Slice the bell peppers into strips.
- 18. Slice the zucchini into rounds.
- 19. Heat four tablespoons of oil in a pan.
- 20. Sauté the vegetables one at a time for about two minutes on each side.
- 21. Cut the lemon in half.
- 22. Squeeze out the juice of the lemon.
- 23. Press the garlic.
- 24. Mix the garlic with the yogurt.
- 25. Add half a teaspoon of salt and pepper to the yogurt mixture.
- 26. Adjust the sauce with one tablespoon of lemon juice to taste.
- 27. Place a wrap on a work surface.
- 28. Spread the bulgur salad on the wrap.
- 29. Place the grilled vegetables on top.
- 30. Add the yogurt sauce.
- 31. Optionally add fresh parsley and mint.
- 32. Fold the wrap.
- 33. Serve the wrap immediately.
