  1. 1. Rinse quinoa thoroughly in a sieve under hot water. Then bring to a boil in a pot with about 900 ml of salted water and Ras el Hanout, covered, and simmer on low heat for about 20 minutes. After that, drain and let cool.
  2. 2. Wash, peel, and finely grate the carrots. Cut the onion in half, peel, and dice it finely. Peel and finely chop the garlic. Wash the herbs, dry them, remove the thick stems, and chop them finely.
  3. 3. Heat 1 tablespoon of oil in a pan over high heat and sauté the carrots, onions, and garlic for about 3 minutes. Sprinkle with sugar and remove the pan from the heat. In a bowl, mix Skyr with 1 tablespoon of grated carrots and the herbs. Season with salt and pepper.
  4. 4. In a bowl, combine the remaining carrots with quinoa, egg, and breadcrumbs. Season with salt, pepper, and cinnamon. Form about 4 cm large patties from the mixture and flatten them slightly.
