🍽️ Orientalische Carrots – Radish Pan with Peanut Sauce

Ingredients
- Carrots 800 g
- Ginger, fresh 20 g
- Radishes 1 bunch
- Olive oil 2 tbsp
- Cumin 1 tsp
- Cilantro, ground 1 tsp
- Organic Limes 1 pc.
- Pomegranate 1 pc.
- Parsley, fresh 1 bunch
- Peanut butter 2 tbsp
Instructions
- 1. Peel the carrots and cut them into small cubes.
- 2. Peel the ginger and dice it finely as well.
- 3. Wash the radishes thoroughly and slice them into thin rounds.
- 4. Heat two tablespoons of olive oil in a pan over medium heat.
- 5. Add the ginger to the pan and sauté it for about one to two minutes.
- 6. Add the carrot cubes and sauté them for seven to eight minutes.
- 7. Add cumin and coriander and sauté the spices for two minutes.
- 8. Add the radish slices to the pan and sauté them for two minutes.
- 9. Cut the lime in half and squeeze out the juice.
- 10. Cut the pomegranate in half and remove the seeds, for example by tapping the back of the skin.
- 11. Wash the parsley, shake it dry, and chop it finely.
- 12. Deglaze the vegetables with the lime juice.
- 13. Stir in the peanut butter and season the sauce with salt and pepper.
- 14. Sprinkle the finished dish with pomegranate seeds and parsley.
- 15. Serve the pan and enjoy your meal!
