  1. 1. Peel the carrots and trim off the ends.
  2. 2. Grate the carrots roughly.
  3. 3. Wash the coriander and dry it.
  4. 4. Remove the thick stems from the coriander.
  5. 5. Chop the coriander finely.
  6. 6. Halve the onion and peel it.
  7. 7. Dice the onion into small cubes.
  8. 8. Heat the oil in a pan over high heat.
  9. 9. Sauté the minced meat for about 5 minutes, stirring until crumbly.
  10. 10. Season the meat with salt, pepper, cinnamon, cumin, and coriander.
  11. 11. Add the tomato paste, carrots, and onions.
  12. 12. Cook the mixture for another 5 minutes.
  13. 13. Season the filling well with salt and pepper to taste.
  14. 14. Let the filling cool slightly.
  15. 15. Preheat the oven to 180 °C (fan).
  16. 16. Separate one egg into yolk and white.
  17. 17. Whisk the yolk, egg white, and sour cream together in a bowl.
  18. 18. Fold the egg mixture into the minced meat filling.
  19. 19. Roll out the puff pastry.
  20. 20. Cut the dough into four pieces.
  21. 21. Slice each piece diagonally into triangles.
  22. 22. Spread the meat filling along the long side of the triangles.
  23. 23. Roll the triangles into croissants.
  24. 24. Place the croissants on a baking sheet lined with parchment paper.
  25. 25. Whisk the cream and egg yolk together in a bowl.
  26. 26. Brush the croissants with the cream and egg yolk mixture.
  27. 27. Bake the croissants in the oven for about 15 minutes until golden brown.
  28. 28. Carefully remove the trays.
  29. 29. Let the croissants cool slightly or serve them warm.
