🍽️ Oriental Minced Meat Croissants

Ingredients
- Carrots 3 pcs
- Cilantro, fresh 20 g
- Onions, yellow 1 pcs
- Olive oil 2 tbsp
- Ground pork 500 g
- Salt pinch
- Pepper, black ground pinch
- Cinnamon 0.25 tsp
- Cumin 0.5 tsp
- Tomato paste 2 tbsp
- Eggs 2 pcs
- Sour cream 150 g
- Puff pastry 2 pcs
- Whipping cream 4 tbsp
Instructions
- 1. Peel the carrots and trim off the ends.
- 2. Grate the carrots roughly.
- 3. Wash the coriander and dry it.
- 4. Remove the thick stems from the coriander.
- 5. Chop the coriander finely.
- 6. Halve the onion and peel it.
- 7. Dice the onion into small cubes.
- 8. Heat the oil in a pan over high heat.
- 9. Sauté the minced meat for about 5 minutes, stirring until crumbly.
- 10. Season the meat with salt, pepper, cinnamon, cumin, and coriander.
- 11. Add the tomato paste, carrots, and onions.
- 12. Cook the mixture for another 5 minutes.
- 13. Season the filling well with salt and pepper to taste.
- 14. Let the filling cool slightly.
- 15. Preheat the oven to 180 °C (fan).
- 16. Separate one egg into yolk and white.
- 17. Whisk the yolk, egg white, and sour cream together in a bowl.
- 18. Fold the egg mixture into the minced meat filling.
- 19. Roll out the puff pastry.
- 20. Cut the dough into four pieces.
- 21. Slice each piece diagonally into triangles.
- 22. Spread the meat filling along the long side of the triangles.
- 23. Roll the triangles into croissants.
- 24. Place the croissants on a baking sheet lined with parchment paper.
- 25. Whisk the cream and egg yolk together in a bowl.
- 26. Brush the croissants with the cream and egg yolk mixture.
- 27. Bake the croissants in the oven for about 15 minutes until golden brown.
- 28. Carefully remove the trays.
- 29. Let the croissants cool slightly or serve them warm.
