🍰 Orange Soda Cupcakes with Quark Cream

Ingredients
- Sugar 150 g
- Salt pinch
- Wheat flour, Type 405 200 g
- Baking powder 1 tsp
- Eggs 2 pcs
- Vanilla extract 2 tsp
- Sunflower oil 150 ml
- Orange soda 150 ml
- Quark 40% fat in dry matter 250 g
- Icing sugar 60 g
- Orange paste 1 tsp
- Food coloring, red 1 g
- Food coloring, yellow 1 g
- Whipping cream 200 g
- San-apart 4.5 tsp
- Oranges 1 pc
Instructions
- 1. Preheat the oven to 190 degrees Celsius top/bottom heat.
- 2. Place paper liners into a muffin tin.
- 3. Mix sugar, a pinch of salt, flour, and baking powder in a bowl.
- 4. Whisk eggs, one teaspoon of vanilla extract, sunflower oil, and orange soda in a second bowl.
- 5. Add the liquid mixture to the dry ingredients and stir briefly until a smooth batter forms.
- 6. Fill the batter evenly into the paper liners using a large spoon.
- 7. Bake the cupcakes for 20 to 25 minutes in the preheated oven.
- 8. Remove the muffins from the oven and the tin.
- 9. Let the cupcakes cool completely on a wire rack.
- 10. Mix quark, powdered sugar, one teaspoon of vanilla extract, and orange paste into a creamy mixture.
- 11. Color the cream with food coloring as desired.
- 12. Pour the cream in slowly and whip the cream stiff using a cream stabilizer.
- 13. Fill the finished cream into a piping bag with a 16 mm star tip.
- 14. Pipe the cream decoratively onto the cooled cupcakes.
- 15. Place the cupcakes in the refrigerator until serving.
- 16. Slice an orange into rounds and cut each round into quarters.
- 17. Lightly pat the orange slices with a kitchen towel to remove excess moisture.
- 18. Cut paper drinking straws into three pieces as desired.
- 19. Decorate the cupcakes for serving with the orange slices and drinking straws.
