  1. 1. Thoroughly rinse the oranges under running water.
  2. 2. Grate about one teaspoon of fine zest from each orange.
  3. 3. Peel two oranges completely using a sharp knife.
  4. 4. Remove the white pith and catch the released juice.
  5. 5. Release the segments from the peeled oranges by making V-shaped cuts.
  6. 6. Halve the remaining oranges.
  7. 7. Squeeze the juice from the halved oranges.
  8. 8. Place the grated zest, the caught juice, and the segments into a pot.
  9. 9. Add liquid until you have a total volume of one liter.
  10. 10. Mix the mixture with jam sugar.
  11. 11. Bring the mixture to a boil while stirring occasionally.
  12. 12. Let the marmalade simmer gently for about four minutes.
  13. 13. Stir constantly to prevent burning.
  14. 14. Take one teaspoon of marmalade and place it on a cold plate.
  15. 15. Check after one minute if the marmalade has set.
  16. 16. If it is still liquid, cook it for one to two minutes longer.
  17. 17. Repeat the setting test until the marmalade is firm.
  18. 18. Carefully remove the forming foam with a spoon.
  19. 19. Fill the hot marmalade into clean screw-top jars.
  20. 20. Seal the jars tightly.
  21. 21. Place the jars upside down on their lids to let them cool.
