Ingredients
- vanilla pod 1 pc
- wheat flour, Type 405 225 g
- sugar 200 g
- salt pinch
- margarine, vegan 120 g
- oranges 1 pc
- lemons 1 pc
- soy yogurt 800 g
- vanilla pudding powder 1 packet
- oil 100 ml
- blueberries, fresh 100 g
Instructions
- 1. Slice the vanilla pod lengthwise and scrape out the seeds.
- 2. In a bowl, mix the flour, 125 g sugar, the vanilla seeds, and a pinch of salt.
- 3. Add 120 g of small margarine pieces and knead everything into a dough.
- 4. Press the dough onto a baking sheet lined with baking paper.
- 5. Place the tray in the refrigerator for about 30 minutes.
- 6. Preheat the oven to 170 °C (top and bottom heat).
- 7. Bake the base for about 10 minutes.
- 8. Rinse the orange under hot water and finely grate about 1 teaspoon of the zest.
- 9. Halve the lemon and squeeze out the juice.
- 10. In another bowl, mix the soy yogurt, 75 g sugar, vanilla pudding powder, the orange zest, 2 tablespoons of lemon juice, and oil.
- 11. Whisk the mixture with a hand mixer and whisk until creamy.
- 12. Pour the cream into a greased baking dish.
- 13. Bake the cream in the preheated oven for about 15 minutes.
- 14. Turn off the oven and leave the cake in the oven for another 5 minutes with the door slightly ajar.
- 15. Remove the cake and let it cool down a bit.
- 16. Wash the blueberries.
- 17. Crumble the cake base roughly and place it on a plate with a spoon.
- 18. Cut the cake into large pieces using a spatula.
- 19. Arrange the pieces on top of the cake crumbs.
- 20. Garnish everything with blueberries.
