🍽️ One-pan salmon with sweet potatoes

Ingredients
- Salmon fillet, frozen 600 g
- Chili, ground 0.5 tsp
- Pepper, sweet 0.5 tsp
- Salt 0.5 tsp
- Cilantro, ground 0.5 tsp
- Cayenne pepper 0.5 tsp
- Oil 3 tbsp
- Sweet potatoes 800 g
- Spring onions 1 bunch
- Organic limes 1 pc.
- Mint, fresh 1 g
- Caribbean seasoning sauce 5 tbsp
Instructions
- 1. Thaw the frozen salmon overnight in the refrigerator.
- 2. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 3. Mix half a teaspoon each of chili powder, paprika powder, salt, coriander, and cayenne pepper in a small bowl.
- 4. Rinse the salmon and pat it dry with a kitchen towel.
- 5. Rub the salmon with one tablespoon of oil and half of the spice mixture.
- 6. Let the salmon rest briefly to reach room temperature and absorb the spices.
- 7. Peel the sweet potatoes and cut them into roughly one-centimeter thick, long wedges.
- 8. Wash the spring onions and trim off the hard root ends.
- 9. Wash the lime and finely grate about one teaspoon of the zest.
- 10. Slice the lime into thin rounds.
- 11. Place the sweet potatoes, spring onions, and lime slices on a baking sheet.
- 12. Moisten the vegetables with two tablespoons of oil and the remaining spice mixture.
- 13. Spread everything out in a single layer on the baking sheet.
- 14. Put the vegetables in the oven for about ten minutes to pre-cook them.
- 15. Take the baking sheet out of the oven.
- 16. Turn the vegetables once.
- 17. Place the marinated salmon on top of the vegetables.
- 18. Slide the baking sheet into the upper third of the oven.
- 19. Bake the salmon for another ten to fifteen minutes until it is golden brown and cooked through.
- 20. In the meantime, wash the mint and shake it dry.
- 21. Pluck the mint leaves from the stems and chop them roughly.
- 22. Take the finished dish out of the oven.
- 23. Plate the salmon with the sweet potatoes.
- 24. Sprinkle the dish with the lime zest and fresh mint.
- 25. Drizzle some Caribbean seasoning sauce over it and serve hot.
