  1. 1. Thaw the frozen salmon overnight in the refrigerator.
  2. 2. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  3. 3. Mix half a teaspoon each of chili powder, paprika powder, salt, coriander, and cayenne pepper in a small bowl.
  4. 4. Rinse the salmon and pat it dry with a kitchen towel.
  5. 5. Rub the salmon with one tablespoon of oil and half of the spice mixture.
  6. 6. Let the salmon rest briefly to reach room temperature and absorb the spices.
  7. 7. Peel the sweet potatoes and cut them into roughly one-centimeter thick, long wedges.
  8. 8. Wash the spring onions and trim off the hard root ends.
  9. 9. Wash the lime and finely grate about one teaspoon of the zest.
  10. 10. Slice the lime into thin rounds.
  11. 11. Place the sweet potatoes, spring onions, and lime slices on a baking sheet.
  12. 12. Moisten the vegetables with two tablespoons of oil and the remaining spice mixture.
  13. 13. Spread everything out in a single layer on the baking sheet.
  14. 14. Put the vegetables in the oven for about ten minutes to pre-cook them.
  15. 15. Take the baking sheet out of the oven.
  16. 16. Turn the vegetables once.
  17. 17. Place the marinated salmon on top of the vegetables.
  18. 18. Slide the baking sheet into the upper third of the oven.
  19. 19. Bake the salmon for another ten to fifteen minutes until it is golden brown and cooked through.
  20. 20. In the meantime, wash the mint and shake it dry.
  21. 21. Pluck the mint leaves from the stems and chop them roughly.
  22. 22. Take the finished dish out of the oven.
  23. 23. Plate the salmon with the sweet potatoes.
  24. 24. Sprinkle the dish with the lime zest and fresh mint.
  25. 25. Drizzle some Caribbean seasoning sauce over it and serve hot.
