🍝 One-Pot Pasta with Mushrooms and Spinach

Ingredients
- onions, yellow 1 pc.
- garlic cloves 1 pc.
- Penne Rigate 500 g
- water 800 ml
- salt 1 tsp
- mushrooms, white 250 g
- Parmesan 60 g
- oil 2 tbsp
- tomato paste 1 tsp
- pepper, black ground pinch
- baby spinach 100 g
- sour cream 200 g
Instructions
- 1. Halve the onion and peel it. Peel the garlic clove. Wash the spinach and let it drain well. Clean the mushrooms if necessary with a kitchen towel and quarter them. Cut the Parmesan into small pieces. Put the Parmesan into the mixing container and chop it for 10 seconds on speed 10. Then transfer the ground Parmesan into a small bowl.
- 2. Put the onion and garlic into the mixing container and chop them for 4 seconds on speed 8. Push the ingredients down with a spatula. Add the oil and sauté the mixture for 3 minutes on the sauté setting. Add the mushrooms and sauté them for another 3 minutes on the sauté setting. Deglaze everything with cream and water. Cook the mixture for 3 minutes at 100 degrees on speed 1 in reverse stirring, without placing the measuring cup on the lid.
- 3. Add 1 teaspoon of salt, the pasta, the tomato paste, and a pinch of pepper to the mixing container. Cook the pasta for 15 minutes at 100 degrees on speed 1 in reverse stirring. Add the spinach and cook everything for another 8 minutes at 100 degrees on speed 1 in reverse stirring.
- 4. Season the one-pot pasta with mushrooms and spinach with salt and pepper to taste. Serve the dish with the previously ground Parmesan. Enjoy your meal!
