🍝 One-Pot Pasta with Mushrooms

Ingredients
- mushrooms, brown 400 g
- onions, red 2 pcs.
- thyme, fresh 40 g
- bacon strips 125 g
- salt pinch
- pepper, black ground pinch
- white wine, dry 100 ml
- whipping cream 100 g
- vegetable broth 600 ml
- penne rigate 500 g
- parmesan 80 g
Instructions
- 1. If necessary, wipe the mushrooms with a kitchen towel and slice them thinly. Cut the onions in half, peel them, and dice them finely. Rinse the thyme, shake off excess water, and pluck the leaves.
- 2. In a pot, fry the bacon for about 3 minutes until crispy over medium heat, then remove and set aside. In the remaining fat, sauté the mushrooms and onions while stirring for about 3 minutes. Season with salt, pepper, and 3/4 of the thyme.
- 3. Add the wine, then pour in the cream and broth, and bring everything to a boil. Stir in the pasta and cook uncovered, stirring frequently for about 10 minutes, until al dente and the liquid has been absorbed. Add more broth if needed.
- 4. Grate the Parmesan finely. Taste the one-pot pasta and adjust seasoning with salt and pepper if necessary, plate it, and sprinkle with Parmesan, bacon, and the remaining thyme. Enjoy your meal!
