  1. 1. Wash the spring onions and shake them dry.
  2. 2. Remove the root ends of the spring onions.
  3. 3. Cut the white and green parts of the spring onions separately into rings.
  4. 4. Peel the garlic and chop it finely.
  5. 5. Wash the bell pepper and cut it in half.
  6. 6. Remove the stem and seeds from the bell pepper.
  7. 7. Cut the bell pepper into small cubes.
  8. 8. Heat 2 tablespoons of oil in a large pot over high heat.
  9. 9. Fry the minced meat for about 3 minutes.
  10. 10. Add the white spring onion rings, the garlic, and the bell pepper cubes.
  11. 11. Fry the vegetables for another 3 minutes.
  12. 12. Stir in the tomato paste and fry it for 1 minute.
  13. 13. Season the mixture with salt and pepper.
  14. 14. Deglaze the pan with the chopped tomatoes.
  15. 15. Pour in the vegetable broth.
  16. 16. Bring the sauce to a boil.
  17. 17. Add the spaghetti to the pot.
  18. 18. Cook the pasta for about 9 minutes until al dente (firm to the bite).
  19. 19. Add the green spring onion rings.
  20. 20. Finally, adjust the seasoning of the Bolognese with salt and pepper.
