  1. 1. Take the ham out of the fridge and let it sit for a few minutes to warm up.
  2. 2. Whisk the eggs in a bowl with a pinch of salt and pepper until well combined.
  3. 3. Wash the chives, shake off excess water, and chop them into fine rings.
  4. 4. Heat one tablespoon of butter in a frying pan over medium heat.
  5. 5. Pour half of the egg mixture into the pan.
  6. 6. Place two slices of sandwich bread directly into the liquid eggs.
  7. 7. Fry the bottom of the eggs and bread for about two minutes until golden brown.
  8. 8. Carefully flip the bread with a spatula once the eggs have set.
  9. 9. Top the cooked egg side with cheese and the ham as you like.
  10. 10. Fold any excess egg over the filling.
  11. 11. Fold the two slices of bread together to form a sandwich.
  12. 12. Add another tablespoon of butter to the pan.
  13. 13. Fry the sandwich for two to three minutes until golden brown on all sides.
  14. 14. Cut the sandwich in half.
  15. 15. Sprinkle it with the prepared chive rings.
  16. 16. Serve the sandwich immediately.
  17. 17. Repeat the process with the remaining egg and bread slices.
