🍳 Omelette with Zucchini and Peppers

Ingredients
- onions, yellow 1 pc.
- zucchini 1 pc.
- peppers, red 1 pc.
- olive oil 2 tbsp
- chives, fresh 20 g
- eggs 6 pc.
- salt pinch
- pepper, black ground pinch
- rye bread 4 slices
Instructions
- 1. Halve the onion, peel it, and dice it finely. Wash the zucchini, trim the ends, cut it in half lengthwise, and slice it. Wash the bell pepper, remove the stem and seeds, and chop it into small pieces.
- 2. Heat 2 tablespoons of olive oil in a pan over medium heat and sauté the vegetables for about 4–5 minutes.
- 3. Meanwhile, wash the chives, dry them thoroughly, and chop them into fine rings. In a bowl, whisk the eggs with salt and pepper.
- 4. Pour the egg mixture over the vegetables and let it set for about 10–12 minutes over low to medium heat. Cut the finished omelette into pieces, plate them, and serve with bread.
