  1. 1. Cut onions in half, peel, and dice into small cubes. Wash zucchini thoroughly, remove ends, and dice into small pieces as well.
  2. 2. Heat 2 tbsp. oil in a pan over medium to high heat and sauté the prepared vegetables in it, stirring occasionally, for about 6–8 minutes.
  3. 3. Meanwhile, beat the eggs in a bowl and season with salt and pepper. Add the egg mixture to the vegetables and let it set over low to medium heat for approx. 10–12 minutes.
  4. 4. Cut the finished omelette into pieces, plate, and sprinkle with fresh parsley. Enjoy your meal!
