  1. 1. Wash the tomatoes thoroughly under running water.
  2. 2. Remove the hard stem at the top of the tomatoes.
  3. 3. Cut the tomatoes into small cubes.
  4. 4. Cube the feta cheese into small pieces as well.
  5. 5. Halve the onion and peel it.
  6. 6. Cut the onion into thin strips.
  7. 7. Wash the parsley and dry the leaves thoroughly.
  8. 8. Pluck the parsley leaves from the stems.
  9. 9. Finely chop the parsley leaves.
  10. 10. Whisk the eggs in a bowl.
  11. 11. Season the eggs with salt and pepper.
  12. 12. Stir the eggs well until they are creamy.
  13. 13. Heat a frying pan over medium heat.
  14. 14. Melt one tablespoon of butter in the hot pan.
  15. 15. Pour half of the egg mixture into the pan.
  16. 16. Distribute the prepared vegetables evenly over the egg.
  17. 17. Sprinkle the chopped parsley over the omelette.
  18. 18. Distribute the feta cubes evenly on top.
  19. 19. Cook the omelette over medium heat for about five minutes.
  20. 20. Cover the pan while cooking.
  21. 21. Repeat the process for the second omelette.
  22. 22. Cut the finished omelettes into portions.
  23. 23. Plate the omelettes on dishes.
  24. 24. Serve the omelette fresh with bread.
