  1. 1. Fill a pot with about one liter of water and add some salt. Place the pot on the stove and bring the water to a boil.
  2. 2. Thoroughly wash the broccoli under running water. Cut the broccoli into small florets of about one centimeter in size.
  3. 3. Add the broccoli florets to the boiling salted water. Cook them for about three minutes until they are tender-crisp. Remove the pot from the heat and drain the water.
  4. 4. Take a bowl and crack the eggs into it. Season the eggs with a pinch of salt and freshly ground pepper. Whisk the mixture with a fork or whisk until well combined.
  5. 5. Take a non-stick frying pan and heat it over medium heat. Add one tablespoon of butter to the pan and let it melt.
  6. 6. Add half of the cooked broccoli to the hot pan. Spread it evenly across the bottom of the pan.
  7. 7. Pour half of the egg mixture over the broccoli in the pan. Let the omelette cook over medium heat for about five minutes until the eggs have set.
  8. 8. Carefully flip the omelette to brown the other side. Cook it for another three minutes to finish.
  9. 9. Repeat steps 5 to 8 to prepare the second omelette. Use fresh butter and the remaining ingredients.
  10. 10. Divide the finished omelettes onto two plates. Serve them warm with fresh bread. Enjoy your meal!
