🍰 Citrus Olive Oil Cake

Ingredients
- lemons 1 pc.
- oranges 1 pc.
- eggs 3 pc.
- sugar 250 g
- wheat flour, Type 405 500 g
- baking powder 2 tsp
- vanilla sugar 1 packet
- olive oil 300 ml
- milk 250 ml
- powdered sugar 2 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Line a springform pan with baking paper.
- 3. Wash the lemon and orange thoroughly under hot water.
- 4. Grate about one teaspoon of fine zest from each fruit.
- 5. Cut the citrus fruits in half and squeeze out the juice.
- 6. Beat the eggs and sugar in a bowl with a hand mixer until frothy.
- 7. Stir in four tablespoons of the citrus fruit juice into the egg mixture.
- 8. Sift flour, baking powder, and vanilla sugar into the bowl one after the other.
- 9. Mix olive oil and milk in a separate container.
- 10. Stir the oil and milk mixture into the batter in a thin stream.
- 11. Pour the batter into the prepared springform and smooth the surface.
- 12. Bake the cake in the oven for about 60 minutes until golden brown.
- 13. Let the cake cool on a wire rack and carefully remove it from the pan.
- 14. Mix powdered sugar with the previously grated lemon and orange zest.
- 15. Dust the sugar mixture evenly over the cooled cake.
- 16. Cut the cake into pieces and serve.
