  1. 1. Do not preheat the oven, but prepare your workspace.
  2. 2. Put 400 grams of flour, a pinch of sugar, and some salt into a large bowl.
  3. 3. Dissolve the yeast in lukewarm water.
  4. 4. Add the yeast solution and 3 tablespoons of oil to the flour mixture.
  5. 5. Knead the ingredients for about 2 to 3 minutes until a smooth dough forms.
  6. 6. Cover the bowl and let the dough rise in a warm place for 60 minutes.
  7. 7. Chop the olives finely.
  8. 8. Mix the chopped olives with the remaining flour.
  9. 9. Knead this olive-flour mixture into the risen yeast dough.
  10. 10. Divide the dough on a floured surface into 8 equal parts.
  11. 11. Let the dough portions rest for 10 minutes.
  12. 12. Roll each portion into a flatbread with a diameter of about 15 centimeters.
  13. 13. Lightly dust the flatbreads with flour.
  14. 14. Brush the flatbreads thinly with the remaining oil on both sides.
  15. 15. Place the flatbreads on the hot grill.
  16. 16. Grill the flatbreads for 3 to 4 minutes per side until golden brown.
  17. 17. Let the flatbreads cool down briefly before serving.
