🍽️ Grilled Olive Flatbreads

Ingredients
- all-purpose flour, Type 405 430 g
- sugar 0.5 tsp
- salt 1 tsp
- yeast, fresh 21 g
- water 250 ml
- olive oil 4 tbsp
- olives, black 50 g
Instructions
- 1. Do not preheat the oven, but prepare your workspace.
- 2. Put 400 grams of flour, a pinch of sugar, and some salt into a large bowl.
- 3. Dissolve the yeast in lukewarm water.
- 4. Add the yeast solution and 3 tablespoons of oil to the flour mixture.
- 5. Knead the ingredients for about 2 to 3 minutes until a smooth dough forms.
- 6. Cover the bowl and let the dough rise in a warm place for 60 minutes.
- 7. Chop the olives finely.
- 8. Mix the chopped olives with the remaining flour.
- 9. Knead this olive-flour mixture into the risen yeast dough.
- 10. Divide the dough on a floured surface into 8 equal parts.
- 11. Let the dough portions rest for 10 minutes.
- 12. Roll each portion into a flatbread with a diameter of about 15 centimeters.
- 13. Lightly dust the flatbreads with flour.
- 14. Brush the flatbreads thinly with the remaining oil on both sides.
- 15. Place the flatbreads on the hot grill.
- 16. Grill the flatbreads for 3 to 4 minutes per side until golden brown.
- 17. Let the flatbreads cool down briefly before serving.
