🍽️ Refreshing cold Okroshka soup

Ingredients
- potatoes, waxy 400 g
- salt pinch
- eggs 2 pcs.
- pickles 4 pcs.
- cucumbers 1 pc.
- radishes 0.5 bunch
- dill, fresh 40 g
- chives, fresh 20 g
- crust ham slices 4 slices
- sour cream 200 g
- mineral water, classic 750 ml
- pepper, black ground pinch
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place the potatoes in a pot and cover them with salted water.
- 3. Bring the water to a boil.
- 4. Reduce the heat to medium.
- 5. Cook the potatoes covered for about 20 minutes.
- 6. Drain the cooked potatoes.
- 7. Rinse the potatoes immediately with cold water to cool them down.
- 8. Peel the cooled potatoes.
- 9. Bring about 1 liter of water to a boil in a separate pot.
- 10. Carefully place the eggs into the boiling water.
- 11. Cook the eggs for about 7 minutes.
- 12. Drain the eggs.
- 13. Cool the eggs down with cold water.
- 14. Peel the cooled eggs.
- 15. Let the gherkins drain briefly.
- 16. Wash the cucumbers.
- 17. Remove the hard ends of the cucumbers.
- 18. Peel the cucumbers according to your preference.
- 19. Wash the radishes.
- 20. Remove the stem bases of the radishes.
- 21. Dice the cucumbers finely.
- 22. Dice the radishes finely.
- 23. Wash the dill and the chives.
- 24. Shake the vegetables dry.
- 25. Cut the chives into fine rings.
- 26. Remove the coarse stems from the dill.
- 27. Chop the dill finely.
- 28. Tear the ham into small pieces with your hands.
- 29. Dice the peeled potatoes into approx. 0.5 cm pieces.
- 30. Dice the peeled eggs into approx. 0.5 cm pieces.
- 31. Put all prepared ingredients into a large bowl.
- 32. Add the sour cream (Smetana).
- 33. Add 1 tablespoon of gherkin brine.
- 34. Mix everything well.
- 35. Stir in approx. 500 ml of sparkling mineral water.
- 36. Season the soup with salt and pepper.
- 37. If necessary, add more sparkling mineral water to achieve the desired liquid consistency.
- 38. Fill the Okroshka into deep plates.
- 39. Serve the soup immediately.
