🍽️ Japanese vegetable pancakes with shrimp

Ingredients
- spring onions 1 bunch
- cabbage 350 g
- ginger, fresh 30 g
- eggs 4 pcs.
- wheat flour, Type 405 240 g
- baking powder 0.5 tsp
- vegetable broth 250 ml
- salt pinch
- pepper, black ground pinch
- party shrimp 200 g
- sesame, white 2 tbsp
- oil 2 tbsp
- mayonnaise 125 g
- soy sauce 2 tbsp
Instructions
- 1. Thoroughly wash the spring onions.
- 2. Cut off the root ends.
- 3. Slice the onions into thin rings.
- 4. Set aside the green parts of the onions separately.
- 5. Remove the outer leaves from the cabbage.
- 6. Halve the head of cabbage.
- 7. Cut out the hard central ribs from the cabbage.
- 8. Slice the cabbage leaves into very thin strips.
- 9. Wash the cut cabbage strips.
- 10. Dry the cabbage in a salad spinner.
- 11. Peel the ginger.
- 12. Finely chop the ginger.
- 13. Put the ginger into a large bowl.
- 14. Add the cut cabbage to the bowl.
- 15. Add the white parts of the spring onions to the bowl.
- 16. Crack the eggs into the bowl.
- 17. Add the flour to the bowl.
- 18. Add the baking powder to the bowl.
- 19. Add the broth to the bowl.
- 20. Mix all ingredients in the bowl thoroughly.
- 21. Season the mixture with salt.
- 22. Season the mixture with pepper.
- 23. Rinse the shrimp.
- 24. Let the shrimp drain well.
- 25. Heat a pan.
- 26. Add the sesame seeds to the hot pan.
- 27. Lightly toast the sesame seeds without fat.
- 28. Remove the toasted sesame seeds from the pan.
- 29. Place the sesame seeds on a plate.
- 30. Let the sesame seeds cool down.
- 31. Heat oil in a pan over medium heat.
- 32. Take a quarter of the cabbage mixture.
- 33. Put the cabbage mixture into the hot pan.
- 34. Press the cabbage mixture down slightly in the pan.
- 35. Take a quarter of the shrimp.
- 36. Place the shrimp on the pancake.
- 37. Fry the Okonomiyaki for about 4 minutes.
- 38. Turn the Okonomiyaki over.
- 39. Fry the other side for about 4 minutes.
- 40. Place the finished pancake on kitchen paper.
- 41. Let the pancake drain.
- 42. Keep the pancake warm.
- 43. Repeat the steps for all pancakes.
- 44. Put the mayonnaise into a small bowl.
- 45. Add the soy sauce to the bowl with the mayonnaise.
- 46. Mix the mayonnaise and soy sauce.
- 47. Put some of the sauce on each Okonomiyaki.
- 48. Sprinkle the green parts of the spring onions over it.
- 49. Sprinkle the toasted sesame seeds over it.
- 50. Serve the Okonomiyaki.
