🍽️ Hollowed Tomatoes Stuffed with Minced Meat and Beans

Ingredients
- Bush tomatoes 12 pcs
- Onions, yellow 1 pc
- Garlic cloves 1 pc
- Kidney beans 200 g
- Rapeseed oil 1 tbsp
- Pork mince 400 g
- Salt pinch
- Pepper, black ground pinch
- Sugar 1 tbsp
- Thyme, crushed pinch
Instructions
- 1. Preheat the oven to 220 degrees Celsius with convection.
- 2. Wash the tomatoes thoroughly.
- 3. Cut off the top lids of the tomatoes.
- 4. Carefully hollow out the inside of the tomatoes.
- 5. Leave a rim of about one centimeter thickness.
- 6. Finely chop the removed tomato flesh.
- 7. Cut the onion in half.
- 8. Peel the onion.
- 9. Dice the onion finely.
- 10. Peel the garlic.
- 11. Chop the garlic.
- 12. Drain the beans in a sieve.
- 13. Heat oil in a pot over high heat.
- 14. Sauté the onions and garlic for about one minute.
- 15. Add the minced meat to the pot.
- 16. Fry the meat for about five minutes until it is crumbly.
- 17. Add the chopped tomato flesh to the pot.
- 18. Let the mixture simmer for about four minutes.
- 19. Season with salt, pepper, sugar, and thyme.
- 20. Stir the beans into the filling.
- 21. Place the hollowed tomatoes in a baking dish.
- 22. Fill the tomatoes with the minced meat mixture.
- 23. Bake the tomatoes in the oven for about twenty minutes.
- 24. After ten minutes of baking time, place the tomato tops back on.
- 25. Serve the stuffed tomatoes on plates.
