🍽️ Oven-Baked Sweet Potato with Cream Cheese Dumplings, Leaf Salad and Grape Dressing

Ingredients
- Sweet potatoes 1 pc.
- Oil 3 tbsp.
- Salt 1 tbsp.
- Parsley, fresh 20 g
- Breadcrumbs 120 g
- Cream cheese, plain 350 g
- Eggs 1 pc.
- Wheat flour, Type 405 1 tbsp.
- Grapes, white 500 g
- Vinegar 1 tbsp.
- Mixed salad greens 250 g
- Pepper, black ground pinch
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan.
- 2. Wash the sweet potato thoroughly and peel it.
- 3. Cut the sweet potato into even slices.
- 4. Line a baking tray with baking paper.
- 5. Arrange the sweet potato slices evenly on the tray.
- 6. Drizzle the slices with one tablespoon of oil.
- 7. Season the sweet potatoes with salt.
- 8. Bake the sweet potatoes in the oven for about 20 minutes.
- 9. Wash the parsley thoroughly.
- 10. Dry the parsley.
- 11. Pluck the parsley leaves from the stems.
- 12. Finely chop the parsley leaves.
- 13. Put breadcrumbs, salt, cream cheese, egg, and the chopped parsley into a bowl.
- 14. Mix the ingredients into a homogeneous mass.
- 15. Knead the mass briefly.
- 16. Let the cream cheese mixture rest briefly.
- 17. Fill a large pot with about four liters of water.
- 18. Salt the water in the pot.
- 19. Bring the salted water to a boil.
- 20. Moisten your hands slightly with flour.
- 21. Form small balls from the cream cheese mixture.
- 22. Let the salted water simmer gently.
- 23. Put the cream cheese balls into the simmering water.
- 24. Make sure the water is not boiling vigorously.
- 25. Let the dumplings cook for about four to five minutes.
- 26. Carefully remove the dumplings with a slotted spoon.
- 27. Place the dumplings on a plate.
- 28. Wash the grapes.
- 29. Halve half of the grapes.
- 30. Put the remaining whole grapes into a tall container.
- 31. Add vinegar and two tablespoons of oil to the grapes.
- 32. Puree the grapes with vinegar and oil.
- 33. Season the dressing with salt and pepper.
- 34. Wash the leaf salad.
- 35. Spin the salad dry.
- 36. Put the salad into a bowl.
- 37. Mix the salad with the dressing.
- 38. Add the halved grapes to the salad.
- 39. Take the sweet potatoes out of the oven.
- 40. Plate the sweet potatoes, cream cheese dumplings, and salad.
- 41. Serve the dish.
