🍽️ Crispy Oven Potatoes with Fresh Chive Yogurt and Crispy Ham

Ingredients
- potatoes, mainly waxy 8 pcs.
- salt pinch
- olive oil 3 tbsp
- chives, fresh 20 g
- organic lemons 1 pc.
- yogurt, plain 300 g
- pepper, black ground pinch
- oil 1 tbsp
- ham cubes 125 g
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Place the potatoes in a pot and cover them with cold, salted water.
- 3. Bring the water to a boil and reduce the heat to medium.
- 4. Cook the potatoes covered for about 20 minutes until tender.
- 5. Preheat the oven to 220 degrees Celsius with fan (convection).
- 6. Drain the potatoes and let them sit for a moment.
- 7. Poke the potatoes all over several times with a fork.
- 8. Drizzle the potatoes with 2 tablespoons of olive oil.
- 9. Place the potatoes in the oven and bake for about 10 minutes.
- 10. Wash the chives and shake off excess water.
- 11. Cut the chives into fine rings.
- 12. Wash the lemon thoroughly.
- 13. Grate about 1 teaspoon of lemon zest.
- 14. Cut the lemon in half.
- 15. Squeeze the juice from the lemon halves.
- 16. Put the yogurt into a bowl.
- 17. Add the lemon zest, lemon juice, chives, and 1 tablespoon of olive oil to the yogurt.
- 18. Season the yogurt mixture with salt and pepper.
- 19. Mix all ingredients well and taste to adjust seasoning.
- 20. Heat some oil in a pan over medium heat.
- 21. Sauté the diced ham for about 3 minutes until crispy.
- 22. Remove the potatoes from the oven.
- 23. Slightly open the potatoes by breaking them apart with a spoon or knife.
- 24. Spoon the chive yogurt onto the potatoes.
- 25. Top with the crispy ham cubes.
- 26. Serve the dish immediately and enjoy.
