🍰 Roasted Plums with Fresh Yeast Rolls

Ingredients
- yeast, fresh 42 g
- sugar 95 g
- water 2 tbsp
- wheat flour, type 405 500 g
- vanilla extract 1 tsp
- salt 1 tsp
- milk 235 ml
- eggs 2 pcs.
- butter 145 g
- plums 1 kg
- brown sugar 50 g
- cinnamon 0.5 tsp
- lemons 0.5 pcs.
Instructions
- 1. Dissolve the yeast in 80 grams of sugar and the water.
- 2. Add the flour, vanilla extract, salt, and 220 grams of milk.
- 3. Add one egg and 100 grams of soft butter.
- 4. Knead the dough for about 10 minutes until it is smooth and elastic.
- 5. Shape the dough into a ball.
- 6. Lightly spray the ball with non-stick cooking spray.
- 7. Let the dough rise covered for about 1 hour until it has doubled in size.
- 8. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 9. Halve the plums and remove the pits.
- 10. Mix the plums with brown sugar, cinnamon, and one tablespoon of lemon juice.
- 11. Place the plums in an ovenproof dish.
- 12. Roast the plums in the preheated oven at 180 degrees for 25 to 30 minutes.
- 13. Divide the yeast dough into 16 equal portions.
- 14. Shape each portion into a small ball.
- 15. Grease a large baking pan with some butter.
- 16. Grease your hands with a little butter as well.
- 17. Flatten the dough balls into ovals.
- 18. Roll the ovals slightly.
- 19. Place the rolls side by side in the baking pan.
- 20. Mix one egg with 15 grams of milk and 15 grams of sugar.
- 21. Brush the rolls with the egg mixture.
- 22. Let the rolls rise covered for another 30 minutes.
- 23. Bake the rolls in the hot oven at 170 degrees for 25 to 30 minutes.
- 24. Serve the warm rolls with the roasted plums.
