  1. 1. Preheat the oven to 220 degrees Celsius with fan.
  2. 2. Mix salt, pepper, and Cajun seasoning in a bowl with two tablespoons of oil.
  3. 3. Wash the sweet potatoes thoroughly.
  4. 4. Remove the ends of the sweet potatoes.
  5. 5. Cut the sweet potatoes lengthwise into two or four pieces, depending on their size.
  6. 6. Pierce the sweet potato pieces deeply in several places with a fork.
  7. 7. Toss the sweet potatoes in the spice-oil mixture until they are well coated.
  8. 8. Wrap the sweet potatoes in aluminum foil.
  9. 9. Place the foil packets in the oven and bake for about 30 minutes until tender.
  10. 10. Wash the lime while the potatoes are baking.
  11. 11. Cut the lime in half.
  12. 12. Squeeze the juice from the lime.
  13. 13. Stir two tablespoons of lime juice with one tablespoon of sugar in a bowl.
  14. 14. Stir until the sugar is completely dissolved.
  15. 15. Cut the onion in half.
  16. 16. Peel the onion halves.
  17. 17. Slice the onion into very thin strips.
  18. 18. Add the onion strips to the lime-sugar mixture.
  19. 19. Set the mixture aside to let the flavors meld.
  20. 20. Wash the arugula.
  21. 21. Shake the arugula dry.
  22. 22. Chop the peanuts coarsely.
  23. 23. Remove the sweet potatoes from the oven.
  24. 24. Carefully unwrap the sweet potatoes from the aluminum foil.
  25. 25. Plate the sweet potatoes, marinated onions, and arugula.
  26. 26. Sprinkle the dish with the chopped peanuts.
  27. 27. Serve the dish with Sriracha sauce.
