🍽️ Oven Sweet Potato Wedges with Salsa

Ingredients
- Salt pinch
- Pepper, black ground pinch
- Cajun spice 2.5 g
- Oil 2 tbsp
- Sweet potatoes 4 pcs.
- Organic limes 1 pcs.
- Sugar 1 tbsp
- Onions, red 1 pcs.
- Arugula 50 g
- Peanuts, roasted and salted 4 tbsp
- Sriracha sauce 4 tsp
Instructions
- 1. Preheat the oven to 220 degrees Celsius with fan.
- 2. Mix salt, pepper, and Cajun seasoning in a bowl with two tablespoons of oil.
- 3. Wash the sweet potatoes thoroughly.
- 4. Remove the ends of the sweet potatoes.
- 5. Cut the sweet potatoes lengthwise into two or four pieces, depending on their size.
- 6. Pierce the sweet potato pieces deeply in several places with a fork.
- 7. Toss the sweet potatoes in the spice-oil mixture until they are well coated.
- 8. Wrap the sweet potatoes in aluminum foil.
- 9. Place the foil packets in the oven and bake for about 30 minutes until tender.
- 10. Wash the lime while the potatoes are baking.
- 11. Cut the lime in half.
- 12. Squeeze the juice from the lime.
- 13. Stir two tablespoons of lime juice with one tablespoon of sugar in a bowl.
- 14. Stir until the sugar is completely dissolved.
- 15. Cut the onion in half.
- 16. Peel the onion halves.
- 17. Slice the onion into very thin strips.
- 18. Add the onion strips to the lime-sugar mixture.
- 19. Set the mixture aside to let the flavors meld.
- 20. Wash the arugula.
- 21. Shake the arugula dry.
- 22. Chop the peanuts coarsely.
- 23. Remove the sweet potatoes from the oven.
- 24. Carefully unwrap the sweet potatoes from the aluminum foil.
- 25. Plate the sweet potatoes, marinated onions, and arugula.
- 26. Sprinkle the dish with the chopped peanuts.
- 27. Serve the dish with Sriracha sauce.
