🍽️ Oven Pancakes with Salmon and Cucumber Salad

Ingredients
- Eggs 3 pcs.
- Milk 160 ml
- Wheat flour, Type 405 70 g
- Salt pinch
- Butter 2 tbsp.
- Cucumbers 0.5 pcs.
- Dill, fresh 10 g
- Mustard 1 tsp.
- Olive oil 2 tbsp.
- Vinegar 1 tbsp.
- Pepper, black ground pinch
- Sugar pinch
- Smoked salmon 150 g
- Creme fraiche 2 tbsp.
Instructions
- 1. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 2. Place an oven-safe pan in the oven and let it heat up.
- 3. Whisk eggs, milk, flour, and salt in a bowl to form a slightly thick batter.
- 4. Carefully remove the hot pan from the oven.
- 5. Melt the butter completely in the hot pan.
- 6. Pour the pancake batter into the pan.
- 7. Place the pan back into the oven.
- 8. Bake the pancake for about 15 to 20 minutes until golden brown.
- 9. Wash the cucumber under running water.
- 10. Dice the cucumber into small cubes.
- 11. Wash the dill and shake it dry.
- 12. Finely chop the dill.
- 13. Mix the diced cucumber and chopped dill in a bowl with mustard, olive oil, vinegar, salt, pepper, and sugar.
- 14. Finally, adjust the seasoning of the cucumber salad to taste.
- 15. Remove the baked pancake from the oven.
- 16. Fill the pancake with the cucumber salad, smoked salmon, and a dollop of crème fraîche.
- 17. Serve the filled pancake warm.
