  1. 1. Preheat the oven to 220 degrees Celsius with top and bottom heat.
  2. 2. Place an oven-safe pan in the oven and let it heat up.
  3. 3. Whisk eggs, milk, flour, and salt in a bowl to form a slightly thick batter.
  4. 4. Carefully remove the hot pan from the oven.
  5. 5. Melt the butter completely in the hot pan.
  6. 6. Pour the pancake batter into the pan.
  7. 7. Place the pan back into the oven.
  8. 8. Bake the pancake for about 15 to 20 minutes until golden brown.
  9. 9. Wash the cucumber under running water.
  10. 10. Dice the cucumber into small cubes.
  11. 11. Wash the dill and shake it dry.
  12. 12. Finely chop the dill.
  13. 13. Mix the diced cucumber and chopped dill in a bowl with mustard, olive oil, vinegar, salt, pepper, and sugar.
  14. 14. Finally, adjust the seasoning of the cucumber salad to taste.
  15. 15. Remove the baked pancake from the oven.
  16. 16. Fill the pancake with the cucumber salad, smoked salmon, and a dollop of crème fraîche.
  17. 17. Serve the filled pancake warm.
