🍰 Hazelnut Nougat Loaf Cake

Ingredients
- butter 150 g
- sugar 150 g
- salt pinch
- vanilla extract 1 tsp
- eggs 3 pcs
- wheat flour, type 405 200 g
- baking powder 2 tsp
- hazelnut kernels, ground 100 g
- hazelnut kernels, chopped and roasted 140 g
- chocolate sprinkles, milk chocolate 50 g
- milk 100 ml
- couverture, dark chocolate 150 g
- coconut oil 40 g
- chocolate, hazelnut 50 g
Instructions
- 1. Preheat your oven to 180 degrees Celsius with top and bottom heat.
- 2. Grease a loaf pan with baking spray or butter.
- 3. Make sure all ingredients are at room temperature.
- 4. Use self-raising flour and omit the baking powder if you were planning to use it.
- 5. Mix the soft butter with the sugar, a pinch of salt, and vanilla extract for 4 to 5 minutes until the mixture is white and creamy.
- 6. Add one egg at a time to the butter mixture.
- 7. Stir each egg in for one minute until the mixture is homogeneous.
- 8. Add the flour, baking powder, ground hazelnuts, 100 grams of chopped hazelnuts, chocolate sprinkles, and milk.
- 9. Mix the ingredients only briefly until they have just combined.
- 10. Spread the batter evenly into the prepared baking pan.
- 11. Smooth the surface of the batter.
- 12. Bake the cake in the preheated oven at 180 degrees for about 45 to 50 minutes.
- 13. Perform a skewer test to check if the cake is done.
- 14. Remove the cake from the oven.
- 15. Let the cake cool in the pan for about 10 minutes.
- 16. Turn the cake out onto a cooling rack.
- 17. Let the cake cool completely.
- 18. Place the cooled cake with the cooling rack over a plate or baking sheet.
- 19. Melt about two-thirds of the dark chocolate coating over a warm, non-boiling water bath or in the microwave.
- 20. Stir in the remaining third of the coating until everything is melted.
- 21. Add the coconut oil and stir it in.
- 22. Pour the chocolate glaze over the cake.
- 23. Spread the glaze evenly over the surface of the cake.
- 24. Pick up dripping glaze with a brush and paint it along the edge of the cake.
- 25. Melt the hazelnut chocolate over a warm water bath as well.
