🍝 Vegan Pasta with Cheese-Style Sauce and Broccoli

Ingredients
- Salt pinch
- Onions, yellow 1 pc.
- Garlic cloves 1 pc.
- Lemons 1 pc.
- Broccoli 1 pc.
- Margarine, vegan 6 tbsp
- Wheat flour, Type 405 2 tbsp
- Soy drink 400 ml
- Penne Rigate 500 g
- Almonds, whole 40 g
- Breadcrumbs 4 tbsp
- Vemondo Grating Delight 150 g
- Turmeric, ground 0.25 tsp
- Pepper, black ground pinch
Instructions
- 1. Fill a large pot with about 5 liters of water and add salt. Cover the pot and bring the water to a boil.
- 2. Halve an onion, peel it, and cut it into small cubes.
- 3. Peel a clove of garlic and chop it finely.
- 4. Halve a lemon and squeeze out the juice.
- 5. Thoroughly wash a head of broccoli under running water.
- 6. Separate the broccoli into small florets.
- 7. Remove the tough skin from the broccoli stem and chop it roughly.
- 8. Melt 4 tablespoons of margarine in a pot over medium heat.
- 9. Add the chopped onions and minced garlic to the melted margarine.
- 10. Sauté the vegetables for about 2 minutes until they are translucent and colorless.
- 11. Add flour and stir well to combine it with the fat.
- 12. Toast the flour mixture lightly for about 1 minute.
- 13. Deglaze the mixture with soy drink and mix everything well.
- 14. Let the sauce simmer gently for about 5 minutes.
- 15. Stir turmeric and vegan grated cheese substitute into the sauce.
- 16. Continue stirring until the sauce is smooth and creamy.
- 17. Season the sauce to taste with salt, pepper, and the squeezed lemon juice.
- 18. Add the pasta to the boiling salted water.
- 19. Cook the pasta for about 9 minutes until al dente (firm to the bite).
- 20. Add the broccoli after about 4 minutes of the pasta's cooking time.
- 21. Cook the broccoli along with the pasta for another 5 minutes.
- 22. Chop almonds roughly.
- 23. Heat 2 tablespoons of margarine in a frying pan over medium heat.
- 24. Add the chopped almonds and breadcrumbs to the hot pan.
- 25. Fry the mixture for about 2 to 3 minutes until crispy.
- 26. Drain the pasta and broccoli in a colander.
- 27. Portion the pasta and broccoli onto plates.
- 28. Pour the vegan cheese sauce over the pasta.
- 29. Sprinkle the crispy almonds on top.
- 30. Serve the dish immediately and enjoy your meal!
