🍝 Hokkaido Pumpkin Spaghetti with Orange Cream Dip and Fresh Basil

Ingredients
- Salt Pinch
- Hokkaido pumpkin 1 pc.
- Onions, red 2 pcs.
- Oil 2 tbsp
- Pepper, black ground Pinch
- Oranges 1 pc.
- Vegetable broth 300 ml
- Whipping cream 100 g
- Spaghetti 500 g
- Basil, fresh 20 g
- Goat cream cheese 150 g
Instructions
- 1. Fill a large pot with about 5 liters of water and add salt. Bring the water to a boil.
- 2. Thoroughly wash the Hokkaido pumpkin under running water.
- 3. Peel the hard skin off the pumpkin.
- 4. Cut the pumpkin in half.
- 5. Scrape out the seeds and the flesh in the center with a spoon.
- 6. Cut the pumpkin flesh into cubes of about 1 cm.
- 7. Halve the onions and peel them.
- 8. Cut the onions into thin strips.
- 9. Heat 2 tablespoons of oil in a pot over medium heat.
- 10. Add the onion strips to the hot oil.
- 11. Sauté the onions for about 2 to 3 minutes until they are soft.
- 12. Add the pumpkin cubes to the pot with the onions.
- 13. Season the mixture with salt and pepper.
- 14. Fry the pumpkin for approx. 3 minutes.
- 15. Wash the orange thoroughly.
- 16. Cut the orange in half.
- 17. Squeeze the juice out of the orange.
- 18. Deglaze the pumpkin with the freshly squeezed orange juice.
- 19. Add the broth to the pot.
- 20. Add the cream to the pot.
- 21. Let the sauce simmer covered on medium heat for about 8 to 10 minutes.
- 22. Add the spaghetti to the boiling salted water.
- 23. Cook the spaghetti for about 10 minutes until al dente (firm to the bite).
- 24. Drain the pasta in a sieve.
- 25. Let the pasta drain well.
- 26. Wash the basil.
- 27. Shake the basil dry.
- 28. Pluck the basil leaves from the stems.
- 29. Finely chop the basil leaves.
- 30. Take a bowl and put the goat cream cheese in it.
- 31. Mix the goat cream cheese with two-thirds of the finely chopped basil leaves.
- 32. Season the cream cheese mixture with salt and pepper.
- 33. Take a large bowl or the pasta pot.
- 34. Thoroughly mix the drained pasta with the pumpkin and the cream cheese mixture.
- 35. Serve the pasta on deep plates.
- 36. Sprinkle the pasta with the remaining fresh basil.
- 37. Add a little extra pepper on top.
