🍝 Pasta with Meatballs and Leeks in Cheese Sauce

Ingredients
- Salt pinch
- Onions, yellow 1 pc
- Parsley, fresh 20 g
- Leek 1 pc
- Penne Rigate 500 g
- Minced meat, mixed 600 g
- Eggs 1 pc
- Breadcrumbs 3 tbsp
- Pepper, black ground pinch
- Butter 8 tbsp
- Wheat flour, Type 405 7 tbsp
- Milk 200 ml
- Vegetable broth 300 ml
- Gouda, medium-aged block 100 g
- Alpine cheese 75 g
- Nutmeg, ground pinch
Instructions
- 1. Bring about 5 liters of water with salt to a boil in a large pot.
- 2. Halve an onion, peel it, and cut it into fine cubes.
- 3. Wash parsley, let it drain well, and remove the coarse stems.
- 4. Cut the parsley into fine strips.
- 5. Wash the leek thoroughly and remove the root end.
- 6. Cut the leek into pieces about 2 cm thick.
- 7. Cook the pasta in the boiling water for about 10 minutes until al dente.
- 8. Place the minced meat, onion cubes, parsley, an egg, breadcrumbs, salt, and pepper in a bowl.
- 9. Mix the ingredients in the bowl thoroughly.
- 10. Form small meatballs with a diameter of about 3 cm from the mixture.
- 11. Melt 3 tablespoons of butter in a frying pan over medium heat.
- 12. Fry the meatballs in the pan for approx. 5 minutes.
- 13. Add the leek pieces to the pan.
- 14. Steam the leek covered for about 10 minutes.
- 15. Season the meatballs and leek to taste with salt and pepper.
- 16. Melt 5 tablespoons of butter in a different pot.
- 17. Add the flour to the melted butter and sweat it for about 3 minutes.
- 18. Deglaze the butter-flour mixture with milk and broth while stirring constantly.
- 19. Bring the sauce to a boil.
- 20. Let the sauce simmer for about 5 minutes, stirring occasionally.
- 21. Remove the rind from the cheese and grate it.
- 22. Add the grated cheese to the sauce and let it melt.
- 23. Season the cheese sauce with nutmeg, pepper, and a little salt.
- 24. Add the leek and meatballs to the cheese sauce.
- 25. Drain the pasta and let it drain well.
- 26. Serve the pasta together with the leek-cheese sauce and meatballs.
