  1. 1. Bring about 5 liters of water with salt to a boil in a large pot.
  2. 2. Halve an onion, peel it, and cut it into fine cubes.
  3. 3. Wash parsley, let it drain well, and remove the coarse stems.
  4. 4. Cut the parsley into fine strips.
  5. 5. Wash the leek thoroughly and remove the root end.
  6. 6. Cut the leek into pieces about 2 cm thick.
  7. 7. Cook the pasta in the boiling water for about 10 minutes until al dente.
  8. 8. Place the minced meat, onion cubes, parsley, an egg, breadcrumbs, salt, and pepper in a bowl.
  9. 9. Mix the ingredients in the bowl thoroughly.
  10. 10. Form small meatballs with a diameter of about 3 cm from the mixture.
  11. 11. Melt 3 tablespoons of butter in a frying pan over medium heat.
  12. 12. Fry the meatballs in the pan for approx. 5 minutes.
  13. 13. Add the leek pieces to the pan.
  14. 14. Steam the leek covered for about 10 minutes.
  15. 15. Season the meatballs and leek to taste with salt and pepper.
  16. 16. Melt 5 tablespoons of butter in a different pot.
  17. 17. Add the flour to the melted butter and sweat it for about 3 minutes.
  18. 18. Deglaze the butter-flour mixture with milk and broth while stirring constantly.
  19. 19. Bring the sauce to a boil.
  20. 20. Let the sauce simmer for about 5 minutes, stirring occasionally.
  21. 21. Remove the rind from the cheese and grate it.
  22. 22. Add the grated cheese to the sauce and let it melt.
  23. 23. Season the cheese sauce with nutmeg, pepper, and a little salt.
  24. 24. Add the leek and meatballs to the cheese sauce.
  25. 25. Drain the pasta and let it drain well.
  26. 26. Serve the pasta together with the leek-cheese sauce and meatballs.
