🍝 Pasta with Meatballs in Tomato Sauce

Ingredients
- Spring onions 1 bunch
- Apples, red 1 pc
- Minced meat, mixed 600 g
- Salt pinch
- Pepper, black ground pinch
- Herbs of Provence, dried 2 tsp
- Oil 2 tbsp
- Tomato paste 3 tbsp
- Sugar 2 tbsp
- Tomatoes, chopped 800 g
- Macaroni 500 g
Instructions
- 1. Wash the spring onions thoroughly and dry them.
- 2. Trim the root ends of the spring onions.
- 3. Slice the white and green parts of the spring onions into rings separately.
- 4. Peel the apple and cut it into quarters.
- 5. Remove the core from the apple quarters.
- 6. Dice the apple flesh into small cubes.
- 7. Place the ground meat in a bowl.
- 8. Season the ground meat with salt, pepper, and herbes de Provence.
- 9. Mix the ingredients in the ground meat well together.
- 10. Shape the meat mixture into balls with a diameter of about 3 cm.
- 11. Heat about 2 tablespoons of oil in a pot over high heat.
- 12. Brown the meatballs on all sides for about 5 minutes.
- 13. Remove the meatballs from the pot and place them in the bowl.
- 14. Leave the pot with the cooking fat unwashed.
- 15. Add the white spring onion rings to the pot.
- 16. Add the apple cubes to the pot.
- 17. Sauté the vegetables and apples for about 1 minute.
- 18. Stir tomato paste and sugar into the mixture.
- 19. Cook the tomato paste mixture for another 2 minutes.
- 20. Add the chopped tomatoes to the pot.
- 21. Bring the sauce to a brief boil.
- 22. Stir the meatballs into the sauce.
- 23. Add the remaining green spring onion rings to the sauce.
- 24. Simmer the sauce on low heat for about 5 minutes.
- 25. Place about 5 liters of water in a large pot and salt it.
- 26. Bring the salted water to a boil.
- 27. Add the pasta to the boiling water.
- 28. Cook the pasta for about 9 minutes until al dente (firm to the bite).
- 29. Drain the pasta in a colander.
- 30. Allow the pasta to drain well.
- 31. Taste the tomato sauce one last time and adjust seasoning.
- 32. Serve the pasta, meatballs, and sauce on plates.
