  1. 1. Wash the spring onions thoroughly and dry them.
  2. 2. Trim the root ends of the spring onions.
  3. 3. Slice the white and green parts of the spring onions into rings separately.
  4. 4. Peel the apple and cut it into quarters.
  5. 5. Remove the core from the apple quarters.
  6. 6. Dice the apple flesh into small cubes.
  7. 7. Place the ground meat in a bowl.
  8. 8. Season the ground meat with salt, pepper, and herbes de Provence.
  9. 9. Mix the ingredients in the ground meat well together.
  10. 10. Shape the meat mixture into balls with a diameter of about 3 cm.
  11. 11. Heat about 2 tablespoons of oil in a pot over high heat.
  12. 12. Brown the meatballs on all sides for about 5 minutes.
  13. 13. Remove the meatballs from the pot and place them in the bowl.
  14. 14. Leave the pot with the cooking fat unwashed.
  15. 15. Add the white spring onion rings to the pot.
  16. 16. Add the apple cubes to the pot.
  17. 17. Sauté the vegetables and apples for about 1 minute.
  18. 18. Stir tomato paste and sugar into the mixture.
  19. 19. Cook the tomato paste mixture for another 2 minutes.
  20. 20. Add the chopped tomatoes to the pot.
  21. 21. Bring the sauce to a brief boil.
  22. 22. Stir the meatballs into the sauce.
  23. 23. Add the remaining green spring onion rings to the sauce.
  24. 24. Simmer the sauce on low heat for about 5 minutes.
  25. 25. Place about 5 liters of water in a large pot and salt it.
  26. 26. Bring the salted water to a boil.
  27. 27. Add the pasta to the boiling water.
  28. 28. Cook the pasta for about 9 minutes until al dente (firm to the bite).
  29. 29. Drain the pasta in a colander.
  30. 30. Allow the pasta to drain well.
  31. 31. Taste the tomato sauce one last time and adjust seasoning.
  32. 32. Serve the pasta, meatballs, and sauce on plates.
