🍲 North German Crab Soup

Ingredients
- potatoes, floury 500 g
- leek 1 pc
- onions, yellow 1 pc
- butter 2 tbsp
- vegetable broth 800 ml
- whipping cream 200 ml
- salt pinch
- pepper, black ground pinch
- nutmeg, ground 0.25 tsp
- North Sea crab meat 200 g
- chives, fresh 10 g
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into cubes of about 1 cm.
- 3. Halve the leek lengthwise and remove the root end.
- 4. Slice the leek into thin rings.
- 5. Rinse the leek rings thoroughly in a sieve.
- 6. Halve the onion and peel it.
- 7. Dice the onion.
- 8. Heat the butter in a pot over medium heat.
- 9. Sauté the onions in it for about 2 minutes.
- 10. Add the potatoes and leek to the pot.
- 11. Sauté the vegetables for another 3 minutes.
- 12. Deglaze the vegetables with the vegetable broth.
- 13. Bring the soup to a boil.
- 14. Let the soup simmer for about 20 minutes over low heat.
- 15. Pour about 300 ml of the soup into a tall container.
- 16. Puree the poured-out soup until smooth.
- 17. Return the pureed soup to the pot.
- 18. Stir the cream into the soup.
- 19. Season the soup with salt, pepper, and nutmeg.
- 20. Add the crabs to the soup.
- 21. Let the crabs simmer in the soup for about 5 minutes.
- 22. Wash the chives and shake them dry.
- 23. Slice the chives into fine rings.
- 24. Divide the crab soup among plates.
- 25. Garnish the soup with the chive rings.
- 26. Serve the soup and enjoy!
