  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Cut the potatoes into cubes of about 1 cm.
  3. 3. Halve the leek lengthwise and remove the root end.
  4. 4. Slice the leek into thin rings.
  5. 5. Rinse the leek rings thoroughly in a sieve.
  6. 6. Halve the onion and peel it.
  7. 7. Dice the onion.
  8. 8. Heat the butter in a pot over medium heat.
  9. 9. Sauté the onions in it for about 2 minutes.
  10. 10. Add the potatoes and leek to the pot.
  11. 11. Sauté the vegetables for another 3 minutes.
  12. 12. Deglaze the vegetables with the vegetable broth.
  13. 13. Bring the soup to a boil.
  14. 14. Let the soup simmer for about 20 minutes over low heat.
  15. 15. Pour about 300 ml of the soup into a tall container.
  16. 16. Puree the poured-out soup until smooth.
  17. 17. Return the pureed soup to the pot.
  18. 18. Stir the cream into the soup.
  19. 19. Season the soup with salt, pepper, and nutmeg.
  20. 20. Add the crabs to the soup.
  21. 21. Let the crabs simmer in the soup for about 5 minutes.
  22. 22. Wash the chives and shake them dry.
  23. 23. Slice the chives into fine rings.
  24. 24. Divide the crab soup among plates.
  25. 25. Garnish the soup with the chive rings.
  26. 26. Serve the soup and enjoy!
