🥗 Classic Nicoise Salad

Ingredients
- potatoes, mainly waxy 500 g
- green beans 250 g
- eggs 4 pcs.
- onions, red 1 pc.
- cherry tomatoes 250 g
- garlic cloves 1 pc.
- thyme, fresh 20 g
- lemons 1 pc.
- mini romaine 2 pcs.
- olives, black 100 g
- olive oil 3 tbsp
- salt pinch
- pepper, black ground pinch
- ciabatta bread 1 pc.
Instructions
- 1. Thoroughly wash the potatoes under running water.
- 2. Place the unpeeled potatoes in a pot and cover them with salted water.
- 3. Bring the water to a boil and reduce the heat to medium.
- 4. Cover the pot and cook the potatoes for about 20 minutes until they are soft.
- 5. Wash the beans and trim the ends.
- 6. Add the beans to the pot with the potatoes and cook them together for approx. 10 minutes.
- 7. Drain the vegetables and rinse them immediately with cold water to stop the cooking process.
- 8. Peel the cooled potatoes and cut them into coarse cubes.
- 9. Bring about 1 liter of water to a boil in a separate pot.
- 10. Boil the eggs for about 10 minutes until hard-boiled.
- 11. Cool the eggs under cold water, peel them, and cut them into six pieces.
- 12. Halve the onions, peel them, and cut them into wedges.
- 13. Wash the cherry tomatoes and cut them into quarters.
- 14. Peel the garlic and chop it finely.
- 15. Wash the thyme, pat it dry, and strip the leaves from the stems.
- 16. Chop the thyme leaves finely.
- 17. Halve the lemon and squeeze out the juice.
- 18. Wash the romaine lettuce and tear the leaves into bite-sized pieces.
- 19. Drain the olives and reserve the marinade in a small bowl.
- 20. In a bowl, mix 2 tablespoons of the marinade, the chopped thyme, the garlic, 2 tablespoons of lemon juice, and olive oil.
- 21. Season the dressing with salt and pepper to taste.
- 22. Gently mix all prepared ingredients with the dressing.
- 23. Serve the salad together with ciabatta bread.
- 24. Enjoy your meal! Optionally, you can also add tuna.
