  3. 3. Place the onion chunks into a large bowl.
  4. 4. Pour the beer over the onions.
  5. 5. Add the mustard.
  6. 6. Season the marinade with salt and pepper to taste.
  7. 7. Stir in a small amount of sugar to balance the acidity.
  8. 8. Rinse the neck steaks under running water.
  9. 9. Pat the meat completely dry with a kitchen towel.
  10. 10. Place the steaks into the beer marinade.
  11. 11. Place the bowl in the refrigerator.
  12. 12. Let the meat marinate for the desired amount of time.
  13. 13. Remove the meat from the marinade and let it drip briefly.
  14. 14. Preheat your grill.
  15. 15. Place the steaks on the hot grill grate.
  16. 16. Grill the steaks for about 15 minutes.
