🍰 Peanut Butter Banana Granola Bars

Ingredients
- walnut kernels 100 g
- whole hazelnut kernels 100 g
- bananas 2 pcs.
- eggs 1 pcs.
- butter 100 g
- honey 100 g
- peanut butter 100 g
- oat flakes, coarse 400 g
- wheat flour, Type 405 50 g
- chocolate sprinkles, milk chocolate 100 g
Instructions
- 1. Preheat the oven to 175 °C (top/bottom heat). Roughly chop the nuts. Toast the nuts in a pan without fat over medium heat for about 2 minutes until golden brown. Transfer them to a plate and let them cool. Peel the bananas. Separate the egg and use the egg yolk later.
- 2. Beat the egg whites in a bowl with a hand mixer and whisk until stiff. Mash the bananas in another bowl with a fork.
- 3. Melt the butter in a pot and stir it smooth together with the honey. Add the peanut butter, oat flakes, the melted butter, the flour, the nuts, and the chocolate sprinkles to the bananas and mix everything well. Gently fold the stiffly beaten egg whites into the mixture.
- 4. Distribute the granola mixture on a baking sheet lined with baking paper and shape it about 2 cm thick. Bake them in the oven for approx. 25 minutes. Let the bars cool for about 10 minutes afterwards and cut them into pieces. Serve immediately or store them cool and dry until consumption. Enjoy your meal!
