🍳 Crispy Muesli Rolls with Bacon and Cheese

Ingredients
- yeast, fresh 0.5 g
- water 250 ml
- sugar 1 tsp
- spelt flour, type 630 500 g
- salt 1 tsp
- oil 1 tbsp
- bacon strips 125 g
- Emmental cheese, grated 200 g
- muesli with fruits, nuts and seeds 100 g
Instructions
- 1. Dissolve the yeast in lukewarm water and stir in the sugar.
- 2. Let the yeast mixture sit covered for about ten minutes.
- 3. Add the flour and salt to the yeast mixture.
- 4. Knead the ingredients by hand into a smooth dough.
- 5. Let the dough rise in a warm place, covered, for about thirty minutes.
- 6. Wait until the dough volume has roughly doubled.
- 7. Heat the oil in a pan over medium heat.
- 8. Fry the bacon strips until crispy for about four minutes.
- 9. Drain the fried bacon on paper towels.
- 10. Add the bacon cubes, nut muesli, and three quarters of the grated cheese to the dough.
- 11. Knead the ingredients well into the dough.
- 12. Divide the dough into eight equal portions.
- 13. Place the dough portions on a baking sheet lined with parchment paper.
- 14. Cover the rolls with a clean kitchen towel.
- 15. Let the rolls rise for another thirty minutes.
- 16. Preheat the oven to 200 degrees top and bottom heat.
- 17. Sprinkle the rolls with the remaining grated cheese.
- 18. Bake the rolls in the oven for about twenty-five minutes.
- 19. Carefully remove the rolls from the oven.
- 20. Let the rolls cool slightly before serving them.
