🍰 Muesli Muffins with Blueberries

Ingredients
- butter 80 g
- blueberries, fresh 150 g
- bananas 1 pc.
- buttermilk 150 ml
- eggs 1 pc.
- honey 60 g
- wheat flour, Type 405 200 g
- crunchy muesli 100 g
- baking powder 1 tsp
- vanilla sugar 20 g
Instructions
- 1. Preheat the oven to 200 °C (convection). Melt the butter in a pot over medium heat and let it cool down afterwards.
- 2. Sort through the blueberries, wash them and let them drain well. Peel the banana and puree it together with the buttermilk in a tall container.
- 3. Mix the egg, honey and cooled butter in a bowl. Add flour, muesli, baking powder and vanilla sugar and mix everything well. Add the blueberries. Stir the banana milk in carefully with a spoon until the batter just holds together.
- 4. Distribute the batter on a muffin tin lined with paper liners. Bake the muffins in the oven for about 35–40 minutes, until they are light brown. Let the muesli muffins with blueberries cool down a bit and serve them lukewarm or cold. Enjoy!
