🍰 Quark Mousse with Caramelized Nectarines

Ingredients
- Leaf gelatin 6 g
- Quark 20 % fat in Tr. 400 g
- Honey 50 g
- Vanilla sugar 20 g
- Whipping cream 200 g
- Nectarine 4 pcs.
- Butter 2 tbsp
- Brown sugar 3 tbsp
- Orange juice 150 ml
- Rosemary, fresh 10 g
Instructions
- 1. Soak the gelatin in a bowl of cold water.
- 2. Mix the quark in a separate bowl thoroughly with the honey and vanilla sugar.
- 3. Squeeze the soaked gelatin well.
- 4. Dissolve the gelatin in a small pot over low heat for about 2 minutes.
- 5. Stir 2 tablespoons of the quark mixture with the dissolved gelatin.
- 6. Fold this gelatin-quark mixture into the remaining quark mass.
- 7. Whip the cream in a separate bowl until stiff using a hand mixer.
- 8. Gently fold the whipped cream into the quark mixture.
- 9. Let the mousse set in the refrigerator for at least 2 hours.
- 10. Wash the nectarines thoroughly.
- 11. Halve the nectarines and remove the pit.
- 12. Cut the nectarines into wedges.
- 13. Melt the butter in a pan over medium heat.
- 14. Fry the nectarines on both sides for about 2 minutes.
- 15. Sprinkle the nectarines with sugar.
- 16. Caramelize the nectarines for another 2 minutes.
- 17. Deglaze the pan with orange juice.
- 18. Bring the liquid to a boil.
- 19. Let the caramelized nectarines cool down.
- 20. Portion the quark mousse onto plates using a spoon.
- 21. Decorate the mousse with the caramelized nectarines and rosemary.
- 22. Serve the dessert and enjoy!
