  1. 1. Attach the whisk to the mixing bowl.
  2. 2. Separate the eggs and set the yolks aside.
  3. 3. Add the egg whites, sugar, and a pinch of salt to the bowl.
  4. 4. Whip the mixture with the lid on for 4.5 minutes at speed 4 until stiff peaks form.
  5. 5. Remove the egg whites and keep them cool.
  6. 6. Remove the whisk and rinse the bowl.
  7. 7. Reattach the whisk.
  8. 8. Add the cold cream to the bowl.
  9. 9. Whip the cream without the lid for 1.5 minutes at speed 4 until stiff.
  10. 10. Remove the cream and keep it cool.
  11. 11. Remove the whisk and clean the bowl thoroughly.
  12. 12. Add the chocolate pieces to the bowl.
  13. 13. Chop the chocolate for 15 seconds at speed 8.
  14. 14. Scrape down the sides of the bowl with a spatula.
  15. 15. Melt the chocolate for 2.5 minutes at speed 1 and 50 degrees Celsius.
  16. 16. Scrape down the sides again if the chocolate is not fully melted.
  17. 17. Melt the chocolate for another 1.5 minutes at speed 1 and 50 degrees Celsius.
  18. 18. Add the reserved egg yolks to the chocolate.
  19. 19. Mix everything for 20 seconds at speed 1.
  20. 20. Attach the whisk.
  21. 21. Add the cream and egg whites to the chocolate mixture.
  22. 22. Mix everything for 45 seconds at speed 3.
  23. 23. Stir the mixture once with a spatula.
  24. 24. Mix everything again for 10 seconds at speed 3.
  25. 25. Fill the mousse into glasses.
  26. 26. Place the glasses in the fridge for at least 2 hours.
  27. 27. Garnish the mousse with rum if desired.
