🍰 Classic Chocolate Mousse

Ingredients
- Eggs 4 pcs.
- Sugar 50 g
- Salt pinch
- Whipping cream 250 ml
- Chocolate, dark 200 g
Instructions
- 1. Attach the whisk to the mixing bowl.
- 2. Separate the eggs and set the yolks aside.
- 3. Add the egg whites, sugar, and a pinch of salt to the bowl.
- 4. Whip the mixture with the lid on for 4.5 minutes at speed 4 until stiff peaks form.
- 5. Remove the egg whites and keep them cool.
- 6. Remove the whisk and rinse the bowl.
- 7. Reattach the whisk.
- 8. Add the cold cream to the bowl.
- 9. Whip the cream without the lid for 1.5 minutes at speed 4 until stiff.
- 10. Remove the cream and keep it cool.
- 11. Remove the whisk and clean the bowl thoroughly.
- 12. Add the chocolate pieces to the bowl.
- 13. Chop the chocolate for 15 seconds at speed 8.
- 14. Scrape down the sides of the bowl with a spatula.
- 15. Melt the chocolate for 2.5 minutes at speed 1 and 50 degrees Celsius.
- 16. Scrape down the sides again if the chocolate is not fully melted.
- 17. Melt the chocolate for another 1.5 minutes at speed 1 and 50 degrees Celsius.
- 18. Add the reserved egg yolks to the chocolate.
- 19. Mix everything for 20 seconds at speed 1.
- 20. Attach the whisk.
- 21. Add the cream and egg whites to the chocolate mixture.
- 22. Mix everything for 45 seconds at speed 3.
- 23. Stir the mixture once with a spatula.
- 24. Mix everything again for 10 seconds at speed 3.
- 25. Fill the mousse into glasses.
- 26. Place the glasses in the fridge for at least 2 hours.
- 27. Garnish the mousse with rum if desired.
