  1. 1. Place the gelatin in a bowl of cold water and let it bloom.
  2. 2. Separate the eggs so that you have the yolks and whites apart.
  3. 3. Whip the egg whites in a bowl using a hand mixer until stiff.
  4. 4. Whip 100 grams of cream until stiff as well.
  5. 5. Place the whipped egg whites and the cream in the cold to chill.
  6. 6. Bring about 500 milliliters of water to a boil in a pot.
  7. 7. Chop the chocolate into small pieces.
  8. 8. Melt the chocolate pieces in a bowl placed over the hot water bath.
  9. 9. Heat the remaining cream in a pot.
  10. 10. Dissolve the coffee powder in the hot cream.
  11. 11. Squeeze the bloomed gelatin lightly.
  12. 12. Dissolve the gelatin in the coffee cream mixture.
  13. 13. Beat the egg yolks with powdered sugar using a hand mixer.
  14. 14. Stir the melted chocolate into the egg yolk mixture.
  15. 15. Stir in the coffee cream mixture.
  16. 16. Gently fold in half of the whipped cream.
  17. 17. Gently fold in the remaining part of the cream.
  18. 18. Gently fold the egg whites into the mixture.
  19. 19. Fill the mousse into small bowls.
  20. 20. Place the bowls in the cold for at least 3 hours.
  21. 21. Decorate the mousse with strawberries as desired.
