🥤 Fresh Mint Sugar Syrup

Ingredients
- mint, fresh 50 g
- sugar 350 g
- water 350 ml
Instructions
- 1. Thoroughly wash the mint under running water.
- 2. Shake the leaves dry.
- 3. Carefully pluck the mint leaves from the stems.
- 4. Roughly chop the leaves with a knife.
- 5. Put the sugar and 350 milliliters of water into a pot.
- 6. Bring the mixture to a boil on the stove.
- 7. Let the liquid simmer and bubble for about two minutes.
- 8. Add the chopped mint to the pot.
- 9. Cook the mint along with the syrup for about one minute.
- 10. Remove the pot from the heat.
- 11. Cover the pot.
- 12. Let the syrup cool down inside the pot.
- 13. Leave the pot out overnight at room temperature.
- 14. Pour the syrup through a fine sieve the next day.
- 15. Squeeze the mint in the sieve well to extract the flavor.
- 16. Bring the strained syrup to a boil again.
- 17. Pour the hot syrup into clean, pre-washed bottles.
- 18. Seal the bottles tightly.
- 19. Let the bottles cool down.
