  1. 1. Thoroughly wash the mint under running water.
  2. 2. Shake the leaves dry.
  3. 3. Carefully pluck the mint leaves from the stems.
  4. 4. Roughly chop the leaves with a knife.
  5. 5. Put the sugar and 350 milliliters of water into a pot.
  6. 6. Bring the mixture to a boil on the stove.
  7. 7. Let the liquid simmer and bubble for about two minutes.
  8. 8. Add the chopped mint to the pot.
  9. 9. Cook the mint along with the syrup for about one minute.
  10. 10. Remove the pot from the heat.
  11. 11. Cover the pot.
  12. 12. Let the syrup cool down inside the pot.
  13. 13. Leave the pot out overnight at room temperature.
  14. 14. Pour the syrup through a fine sieve the next day.
  15. 15. Squeeze the mint in the sieve well to extract the flavor.
  16. 16. Bring the strained syrup to a boil again.
  17. 17. Pour the hot syrup into clean, pre-washed bottles.
  18. 18. Seal the bottles tightly.
  19. 19. Let the bottles cool down.
