  1. 1. Thoroughly wash the kohlrabi under running water.
  2. 2. Peel the tough outer skin of the kohlrabi.
  3. 3. Cut the vegetable into approx. 1 cm cubes.
  4. 4. Place the cubes in a pot and cover with salted water.
  5. 5. Bring the water to a boil.
  6. 6. Cook the kohlrabi covered at medium heat for approx. 10 minutes.
  7. 7. Bring approx. 2 liters of salted water to a boil in a second pot.
  8. 8. Remove the outer leaves from the Brussels sprouts.
  9. 9. Cut the stems of the Brussels sprouts in a cross shape.
  10. 10. Wash the apples thoroughly.
  11. 11. Cut the apples into approx. 1 cm pieces.
  12. 12. Add the Brussels sprouts to the boiling salted water.
  13. 13. Cook the Brussels sprouts at medium heat for approx. 7 minutes.
  14. 14. Drain the Brussels sprouts.
  15. 15. Rinse the minute steaks briefly.
  16. 16. Pat the meat dry with a kitchen towel.
  17. 17. Season the steaks to taste.
  18. 18. Heat 2 tablespoons of oil in a pan over high heat.
  19. 19. Fry the steaks for approx. 1 minute on each side.
  20. 20. Remove the meat from the pan.
  21. 21. Wrap the steaks in aluminum foil.
  22. 22. Set the foil packets aside until serving.
  23. 23. Leave the pan with the pan juices uncleaned.
  24. 24. Drain the cooked kohlrabi.
  25. 25. Return the kohlrabi to the pot.
  26. 26. Add cream to the kohlrabi.
  27. 27. Mash the mixture finely with a potato masher.
  28. 28. Season the purée with salt and pepper.
  29. 29. Set the purée aside covered.
  30. 30. Add 1 tablespoon of oil to the pan with the pan juices.
  31. 31. Warm the oil over medium heat.
  32. 32. Add the apple pieces to the pan.
  33. 33. Add the honey to the pan.
  34. 34. Fry the apples with the honey for approx. 2 minutes.
  35. 35. Add the cooked Brussels sprouts to the pan.
  36. 36. Season the vegetables with salt and pepper.
  37. 37. Fry everything for another approx. 2 minutes.
  38. 38. Spread the kohlrabi purée onto the plates.
  39. 39. Add the apple and Brussels sprout mixture.
  40. 40. Place the minute steaks on top of the vegetables.
  41. 41. Serve the dish immediately.
