🍽️ Quick Pan-Seared Steaks with Kohlrabi Cream and Honey-Glazed Brussels Sprouts

Ingredients
- Kohlrabi 4 pcs
- salt pinch
- Brussels sprouts, fresh 500 g
- apples, green 2 pcs
- minute steaks from pork 600 g
- oil 3 tbsp
- whipping cream 200 ml
- pepper, black ground pinch
- honey 1 tsp
Instructions
- 1. Thoroughly wash the kohlrabi under running water.
- 2. Peel the tough outer skin of the kohlrabi.
- 3. Cut the vegetable into approx. 1 cm cubes.
- 4. Place the cubes in a pot and cover with salted water.
- 5. Bring the water to a boil.
- 6. Cook the kohlrabi covered at medium heat for approx. 10 minutes.
- 7. Bring approx. 2 liters of salted water to a boil in a second pot.
- 8. Remove the outer leaves from the Brussels sprouts.
- 9. Cut the stems of the Brussels sprouts in a cross shape.
- 10. Wash the apples thoroughly.
- 11. Cut the apples into approx. 1 cm pieces.
- 12. Add the Brussels sprouts to the boiling salted water.
- 13. Cook the Brussels sprouts at medium heat for approx. 7 minutes.
- 14. Drain the Brussels sprouts.
- 15. Rinse the minute steaks briefly.
- 16. Pat the meat dry with a kitchen towel.
- 17. Season the steaks to taste.
- 18. Heat 2 tablespoons of oil in a pan over high heat.
- 19. Fry the steaks for approx. 1 minute on each side.
- 20. Remove the meat from the pan.
- 21. Wrap the steaks in aluminum foil.
- 22. Set the foil packets aside until serving.
- 23. Leave the pan with the pan juices uncleaned.
- 24. Drain the cooked kohlrabi.
- 25. Return the kohlrabi to the pot.
- 26. Add cream to the kohlrabi.
- 27. Mash the mixture finely with a potato masher.
- 28. Season the purée with salt and pepper.
- 29. Set the purée aside covered.
- 30. Add 1 tablespoon of oil to the pan with the pan juices.
- 31. Warm the oil over medium heat.
- 32. Add the apple pieces to the pan.
- 33. Add the honey to the pan.
- 34. Fry the apples with the honey for approx. 2 minutes.
- 35. Add the cooked Brussels sprouts to the pan.
- 36. Season the vegetables with salt and pepper.
- 37. Fry everything for another approx. 2 minutes.
- 38. Spread the kohlrabi purée onto the plates.
- 39. Add the apple and Brussels sprout mixture.
- 40. Place the minute steaks on top of the vegetables.
- 41. Serve the dish immediately.
