  1. 1. Let the minute steaks rest at room temperature before cooking.
  2. 2. Peel the ginger and chop it very finely.
  3. 3. Put the apricots, the chopped ginger, and the orange juice into a tall container.
  4. 4. Puree the mixture into a smooth marinade.
  5. 5. Season the marinade with one teaspoon of honey, paprika powder, salt, and cayenne pepper.
  6. 6. Place the minute steaks in the marinade and let them marinate for about 30 minutes.
  7. 7. Wash the celery stalks thoroughly.
  8. 8. Cut the celery stalks into thin strips.
  9. 9. Wash the apple and cut it in half.
  10. 10. Remove the core from the apple halves.
  11. 11. Slice the apple into thin slices.
  12. 12. Heat a frying pan over medium heat.
  13. 13. Roast the hazelnuts in the dry pan for about 2 minutes.
  14. 14. Let the roasted hazelnuts cool down completely.
  15. 15. Chop the cooled hazelnuts coarsely.
  16. 16. Mix mayonnaise, yogurt, mustard, and one teaspoon of honey well together in a bowl.
  17. 17. Season the dressing to taste with salt and pepper.
  18. 18. Add the cut celery stalks and apple slices to the bowl with the dressing.

  20. 20. Sprinkle the chopped hazelnuts over the finished salad.

  25. 25. Grill the steaks for about 3 minutes on each side.
