🍽️ Quick Beef Steaks with Sweet-Sour Apricot Grill Marinade

Ingredients
- minute steaks from pork 600 g
- Ginger, fresh 10 g
- Soft apricots, dried and pitted 100 g
- Orange juice 100 ml
- Honey 1 tbsp
- Pepper, sweet 1 tsp
- Salt pinch
- Cayenne pepper 0.5 tsp
- Stalk celery 1 stalk
- Apples, red 1 stalk
- Hazelnut kernels, whole 4 tbsp
- Mayonnaise 2 tbsp
- Yogurt, plain 1 tbsp
- Mustard 1 tsp
- Pepper, black ground pinch
Instructions
- 1. Let the minute steaks rest at room temperature before cooking.
- 2. Peel the ginger and chop it very finely.
- 3. Put the apricots, the chopped ginger, and the orange juice into a tall container.
- 4. Puree the mixture into a smooth marinade.
- 5. Season the marinade with one teaspoon of honey, paprika powder, salt, and cayenne pepper.
- 6. Place the minute steaks in the marinade and let them marinate for about 30 minutes.
- 7. Wash the celery stalks thoroughly.
- 8. Cut the celery stalks into thin strips.
- 9. Wash the apple and cut it in half.
- 10. Remove the core from the apple halves.
- 11. Slice the apple into thin slices.
- 12. Heat a frying pan over medium heat.
- 13. Roast the hazelnuts in the dry pan for about 2 minutes.
- 14. Let the roasted hazelnuts cool down completely.
- 15. Chop the cooled hazelnuts coarsely.
- 16. Mix mayonnaise, yogurt, mustard, and one teaspoon of honey well together in a bowl.
- 17. Season the dressing to taste with salt and pepper.
- 18. Add the cut celery stalks and apple slices to the bowl with the dressing.
- 19. Toss the vegetables and fruit with the dressing.
- 20. Sprinkle the chopped hazelnuts over the finished salad.
- 21. Preheat the grill to the desired temperature.
- 22. Take the minute steaks out of the marinade.
- 23. Let the steaks drain briefly.
- 24. Place the minute steaks on the hot grill.
- 25. Grill the steaks for about 3 minutes on each side.
- 26. Brush the steaks with the drained marinade while grilling.
- 27. Take the steaks off the grill.
- 28. Let the steaks rest for 2 minutes before serving.
